    These S’mores Cookie Bars are soft, chewy, and taste just like the ooey-gooey campfire classic, with less mess.  Made with crushed graham crackers, mini marshmallows, and Hershey’s Chocolate, this is sure to become your family’s new favorite treat.

    S’mores Cookie Bars Recipe

    If you love the taste of S’mores, but hate the mess, welcome to the recipe that dreams are made of.  These S’mores Cookie Bars are the chewy, cookie bar version of the nostalgic summer favorite.  They’ve got all of the same basic ingredients, like graham crackers, marshmallows and Hershey’s bars, just less campfire smoke, and more fire safety.  

    The texture of these beauties is another thing to love - a little bit chocolate chip cookie, a little bit brownie with gooey melted chocolate and toasty marshmallow.  This recipe is sure to become an instant hit at any time of the year.

    Ingredients in S’mores Cookie Bars

    • Butter - we use unsalted butter.  If you want to use salted butter, you can reduce the salt in the recipe by ¼ teaspoon.
    • Sugar - regular white, granulated sugar.
    • Brown Sugar - we use light brown sugar for this recipe because it has a nice balance of molasses flavor. 
    • Salt
    • Baking Powder - this helps to give the bars a little lift.
    • Flour - we use all-purpose flour.
    • Graham Crackers - any brand will work.  
    • Chocolate Chips - you can use mini or regular size.
    • Marshmallows - we use mini marshmallows.  If you prefer Marshmallow Fluff, you can see our directions below for how to make these S’mores Cookie Bars with that instead.
    • Hershey’s Chocolate Bars - this is classic.  You can always use a different brand of milk chocolate, or else substitute extra chocolate chips.  It’s a good idea to place the broken apart chocolate pieces in the freezer for a few minutes before putting them on top of the hot cookie bar pan so that they hold their shape.

    How To Make S’mores Cookie Bars

    1. Preheat oven to 350 degrees.
    2. In a medium mixing bowl, cream together the room temperature butter, sugar, and brown sugar using a spatula, or the paddle attachment for a stand mixer.  Beat until light and fluffy, or about 2 minutes. 
    3. Add in the vanilla and salt and mix to combine, then slowly add the eggs, mixing on low to combine.
    4. In a separate bowl, whisk together the baking powder and flour, and add into the butter mixture, mixing on low just until combined.  Once your dough is almost completely combined, add the chocolate chips and crushed graham crackers and gently fold in by hand.
    5. Remove dough from the bowl and press into the greased cookie sheet as evenly as possible.
    6. Bake in a preheated oven for about 20 minutes, or until the edges are golden brown and the large cookie has begun to set.  Remove from the oven and spread the mini marshmallows evenly over the top, then return to the oven for about 10 more minutes, until the marshmallows begin to melt and brown slightly.
    7. Remove from the oven and let cool for about 1 minute, then place the frozen Hershey's Chocolate pieces evenly over the top.  Cool completely before cutting into bars.  Enjoy!

    How to Make S’Mores Bars with Marshmallow Creme

    Marshmallow Fluff is an excellent replacement for regular mini marshmallows and if you are a fan, you can try this method.

    1. Mentally divide the dough into thirds, then press about ⅔ of the dough into your prepared baking dish.
    2. Spread about 2 cups of Marshmallow Fluff over the top, then evenly place the Hershey’s Chocolate Bar pieces on the marshmallow creme.
    3. Sprinkle the remaining ? of your dough over the top and press it down gently once you have used it all.  
    4. You can place a few of the Hershey’s Bar pieces over the top if you’d like, then bake as directed.

    Can I Freeze S’mores Cookie Bars?

    Yes!  Just cool completely, then cut into desired size bars.  Store in an airtight container for up to 3 months in the freezer.  To thaw, simply transfer to the fridge overnight, then bring to room temp before eating.

    Ingredients
