Easy Cake Mix Cookies
If you need cookies fast, look no further. Whether it's a last minute request for a school function or a sudden craving, Cake Mix Cookies are easy-peasy, and we've yet to meet someone who doesn't love them.
This is also a perfect recipe to have your little ones help you with. It’s foolproof - just dump in your ingredients, mix, scoop and bake! The next time you do your grocery shopping, throw a couple of different boxes of cake mix into your cart and let them pick out the mix-ins. I’ve found that kids love to help the most when they get to choose.

Did Boxes of Cake Mixes Get Smaller?
You aren’t just seeing things. Over the past few years, the majority of cake mix boxes have shrunk. What used to always be 18.25 oz is now usually 15.25 oz.
We have accounted for this in this Cake Mix Cookie recipe by adding a little extra flour. But, if you happen to purchase a larger (18.25 oz) box of cake mix, just use the entire box and omit the all-purpose flour.
What You Will Need to Make Cake Mix Cookies
- Cake Mix - for this example recipe of Cake Mix Cookies with chocolate chips, we recommend some variety of chocolate cake mix. Vanilla, yellow or even funfetti would taste great, too.
- All-Purpose Flour - like we said, this can be omitted if you happen to find the 18.25 oz sized cake mix boxes.
- Eggs - use your favorite kind of large eggs.
- Vegetable Oil - you want to use a cooking oil that is low in flavor, so you could also substitute canola or corn oil and butter works too.
- Chocolate Chips - we used chocolate chips in this recipe, but you can absolutely substitute another flavor of chocolate chip, or another mix-in altogether.

How to make cookies using cake mix:
- Preheat oven to 350 degrees F.
- Line a baking sheet with parchment paper, a silicone baking mat or spray with non-stick cooking spray.
- In a large bowl, mix your cake mix, flour, eggs, vegetable oil, and chocolate chips together until combined. You can also use a standing mixer with the paddle attachment and mix on low speed.
- Once fully mixed, scoop and roll your dough into 1 ½" balls and place them on your prepared baking sheet about 3" apart.
- Bake for 8-10 minutes, or until the cookies are lightly brown.
- Remove from the oven and let the cookies cool on the pan for 2-5 minutes before transferring them to a cooling rack. Serve immediately or store in an airtight container for up to 3 days. Enjoy!

Tips for the Best Cake Mix Cookies
- Use a cookie scoop (or measuring spoon if you don’t have a scoop) to make all of your cookies the same size. You can feel free to make your cookies smaller or larger than what this recipe calls for, just keep in mind that smaller cookies will bake faster and larger ones will take longer.
- If you don’t want to bake all of your Cake Mix Cookies at once, you can store the dough in the fridge for up to 2 days. We recommend waiting to add sprinkles until just before you bake, though, so that the colors don’t bleed into the dough.
- Once baked, you can store your cookies at room temp in an airtight container for up to 5 days.
- Baked Cake Mix Cookies can also be frozen for up to 2 months. You’ll want to keep the cookies in an airtight container or freezer bag, then thaw at room temperature once you are ready to eat them.
- Unbaked cookies can be frozen, too. It’s easiest if you pre-scoop your dough, then transfer your dough balls to an airtight container and freeze for up to 2 months. Once ready to bake, transfer your cookies to a prepared baking sheet and bake as directed, adding on a couple extra minutes.

Make-Ahead Cookie Dough
- Fridge- You can make the cookie dough ahead of time. It will last in the fridge for a couple of weeks in an airtight container.
- Freezer- Like most cookie doughs, this dough can be frozen and baked at a later date. Simply scoop into balls and place on a parchment-lined pan and freeze until solid. Once frozen, remove from the cookie sheet and place in a freezer bag. They can be stored in the freezer for 3-4 months.
- To Bake Frozen Cookies: Defrost for an hour or two in the fridge and bake as directed. If the dough is very cold, you may need to add a minute or two of cook time.
Storing Baked Cookies
You can also store the cookies already baked.
- Airtight Container- If you want to store the cookies already baked, just place them in a container with a lid. They will stay fresh for a few days.
- Freezer- If you haven’t tried this method, you’re missing out. Cookies freeze really well and are so fun to grab out of the freezer and enjoy. Let them thaw for a few minutes and you’ll have an extra chewy cookie to enjoy. Cookies can remain in the freezer, in an airtight container or freezer bag for up to 3 months.
