How to Make This Orange Creamsicle Cookies Recipe
- Preheat oven to 325 degrees.
- Combine the dry ingredients. Combine flour, baking soda, and salt in a small bowl.
- Mix the cookie dough. Beat the butter, sugar, and vanilla in a large mixing bowl until creamy. Add the eggs and then beat well again. Gradually mix the flour mixture into the butter mixture until all ingredients are combined.
- Portion cookies. Roll the cookie dough into balls, about 1 ยฝ" cookie dough balls and place on a large greased baking sheet.
- Bake. Bake in a preheated 325-degree oven for 8-10 minutes or until the edges are barely golden brown.
- Cool. Let the cookies cool for a couple of minutes on the baking sheet and then transfer to a wire baking rack. Let the cookie cool completely before frosting.
- Make the frosting. In a large bowl, add the room temperature butter. Using a hand mixer (a stand mixer works great too) beat the butter until it is light and fluffy. Add in the powdered sugar and mix on low speed at first and then increase the speed to medium until the mixture is coming together. Slowly add in the orange juice, vanilla extract, orange extract, and orange zest. Continue to mix for another minute or so.
- Adjust if needed. If your frosting is a little too dense, add a teaspoon of orange juice. If your frosting is too runny, add another half cup of powdered sugar. You want your frosting to have stiff peaks but still be spreadable.
- Frost the cookies. Spread the Orange Creamsicle buttercream frosting on your cooled cookie and top with sprinkles. Enjoy!
Make-Ahead Cookie Dough
- Fridge- You can make the cookie dough ahead of time. It will last in the fridge for a couple of weeks in an airtight container.
- Freezer- Like most cookie doughs, this dough can be frozen and baked at a later date. Simply scoop into balls and place on a parchment-lined pan and freeze until solid. Once frozen, remove from the cookie sheet and place in a freezer bag. They can be stored in the freezer for 3-4 months. You can also store the cookie dough in small Tupperware containers. When you know you're ready to bake the cookies, take the dough out of the freezer and thaw in the fridge for 24 hours before you need it.
- To Bake Frozen Cookie Dough Balls: Defrost for an hour or two in the fridge and bake as directed. If the dough is very cold, you may need to add a minute or two of cook time.
Storing Baked Cookies
You can also store the cookies already baked but for this recipe, I'd frost and sprinkle them after you pull them out of the freezer.
- Airtight Container- If you want to store the cookies already baked, just place them in a container with a lid. They will stay fresh for a few days.
- Freezer- If you havenโt tried this method, youโre missing out. Cookies freeze really well and are so fun to grab out of the freezer and enjoy. Let them thaw for a few minutes and youโll have an extra chewy cookie to enjoy. Cookies can remain in the freezer, in an airtight container or freezer bag for up to 3 months.
