Taking a bite of this finely diced fruit salsa is like tasting the rainbow. Because the fruit is cut so small, each bite is loaded with different textures and flavors including strawberries, mangos, green apple, pineapple, and kiwi.

Just before serving, a thin glaze made from strawberry jam and fresh lime juice is tossed in to round out the flavors and add a little extra sweetness. Feel free to experiment with using different types of fruits, adding in fresh herbs like basil and mint, or trying a savory ingredient like jalapenos or red onion.

  1. Prepare the fruit. Wash, peel, and dice your assorted fruit so that you have about 5 cups total.
  2. Toss with strawberry lime. In a small bowl, combine the strawberry jam and lime juice, then toss with the diced fruit.

Ingredients

  • 1 pound strawberries, diced
  • 1 cup pineapple, diced
  • 2 medium kiwi, diced
  • 1 large green apple, diced
  • 1 large mango, diced
  • 2 tablespoons lime juice
  • 2 tablespoons strawberry jam

Instructions
 

  • Prepare the strawberries, pineapple, kiwi, green apple, and mango by washing, peeling and dicing—you will need about 5 cups total. Add them to a large mixing bowl.
