This Turkey Bacon Avocado Chaffle Sandwich makes for a quick, easy, and low-carb lunch.  Using crispy, cheesy, and keto-friendly chaffles instead of bread gives the classic sandwich a fun new twist.

A basic chaffle is made with just two ingredients—eggs and cheese.  Sounds weird but trust me – these are absolutely delicious!  They are cooked in the waffle iron and come out tasting like cheesy waffles.

I decided to take the basic chaffle and toss in some diced pickled jalapenos, then pair it with my favorite sandwich ingredients to give you the turkey bacon avocado chaffle sandwich.  

I like to use just the egg whites so that the chaffles don’t have any eggy flavor to them.  Instead they just taste like crispy, cheesy delicious waffles and they make the most amazing sandwiches!  

This particular sandwich is made with a smear of Laughing Cow Cheese, sliced turkey, bacon and avocado for a yummy high-protein and low carb lunch.  But, you can mix and match and really turn just about any of your favorite sandwiches into chaffle sandwiches.

Key Ingredients

  • Egg Whites – this is what truly holds it all together.  We like to use just the whites so you don’t get any of the “eggy” flavor.  You can save the yolks for another use, or just discard.
  • Shredded Cheese – you’ll need ¼ cup of shredded cheese for each chaffle.  We like to use cheddar cheese and mozzarella cheese and recommend buying the blocks and grated it yourself.  Pre shredded cheese will definitely work, but it has anti-clumping ingredients that don’t allow it to melt quite as well.
  • Diced Pickled Jalapeños – this is optional but it adds an amazing bit of spice for these Turkey Bacon Avocado Chaffle Sandwiches.  You can find them in the jar at the grocery store.
  • Optional: if you want the chaffles to have a little more of a “bready” texture, but still be Keto-friendly, try adding a couple teaspoons of coconut flour or almond flour.
  • Laughing Cow Cheese – you can also use cream cheese.
  • Deli Turkey – any type will work great, or even substitute ham.
  • Bacon – our favorite hack is to buy precooked Costco bacon and toss it into the microwave for about 30 seconds.  It will crisp right up!
  • Tomatoes – any type, sliced thin.
  • Avocado – sliced or spread.
  • Spinach – you can also use lettuce.

How to Make a Chaffle

  1. Mix the batter. Mix the egg whites, shredded cheese and diced jalapeños together.
  2. Add the batter to the waffle iron. Spray a preheated waffle iron with non-stick cooking spray and add about half of the egg mixture then sprinkle with garlic salt.
  3. Cook. Close the waffle iron and cook for 2-3 minutes, or until the chaffle is crispy and golden brown.  Remove it from the waffle iron, set aside and repeat with the remaining egg mixture. 

Recipe Tips

  • Chaffles freeze great so if you’ve got the time and energy to make a huge batch, go for it!  Then you can just pull from the freezer, pop in the toaster and voila!
  • Make sure your chaffle maker is nice and hot before adding the mixture.
  • We recommend shredding your own cheese rather than using pre shredded because it melts much better.
  • Do not overfill the waffle maker!

Can I freeze Chaffles?

haffles freeze wonderfully!  Just make sure they are completely cooled and store in freezer bags.  You can pop them out as needed and toss in the toaster for a super quick and easy chaffle sandwich.

What is the best kind of cheese to use?

You want to use a cheese that can be shredded, but beyond that, you can feel free to experiment on your own.  We have found our favorites to be mozzarella cheese, cheddar cheese, Pepper Jack cheese or a mixture of types.  

Do I need to use a chaffle maker?

Nope—I really like to use the 4-inch Dash Mini Waffle Iron.  They are the perfect size for making chaffles and are pretty inexpensive.  You can use a regular waffle iron but the yield for this particular recipe will be slightly different because of the smaller size.

Sandwich Ingredients

  • 1 wedge Laughing Cow Cheese
  • 3 slices deli turkey
  • 2 slices bacon
  • 1/4 large tomato, sliced
  • 1/2 large avocado, sliced
  • 1/2 cup spinach
  • 1/4 teaspoon salt

How to Make a Basic Chaffle

  • Preheat a small waffle iron.
  • In a small mixing bowl, add the egg whites, shredded cheddar and diced jalapeños. Mix well with a fork.
  • Once it's hot, spray the waffle iron with non-stick cooking spray and add about half of the egg mixture then sprinkle with garlic salt.
  • Close the waffle iron and cook for 2-3 minutes, or until the chaffle is crispy and golden brown. Remove it from the waffle iron, set aside and repeat with the remaining egg mixture.

Turkey Bacon Avocado Chaffle Sandwich

  • Place two chaffles on a flat surface and spread the Laughing Cow Cheese evenly onto one of them.
  • Add the deli turkey, bacon, tomato, avocado and spinach and season with salt and top with the remaining chaffle. Enjoy!
