Cucumber Tomato Avocado Salad
We love this summer salads like this because they are quick, easy, delicious, and healthy to boot. This Cucumber, tomato, and avocado salad with Italian dressing is sweet, salty, tangy, and full of creamy avocado, crunchy cucumber, and fresh chopped tomatoes. Plus, it’s naturally gluten-free, dairy-free, and vegan! Should we go on?
This is a perfect side dish to serve with just about anything, or else each it solo with some fresh bread on the side for an easy al fresco lunch.

Key Salad Ingredients
- Cherry Tomatoes - you can use red, yellow or purple. Just be sure and wash them before cutting in half.
- Avocado - you want to use a ripe avocado, which should give slightly when squeezed gently, but still feel a bit firm.
- Onion - we like to use white onion, but red onion would taste great, too.
- Cucumber - these should be peeled and diced into about ¾” pieces.
- Olive Oil - you can also substitute avocado oil if you would like.
- Lemon Juice - fresh lemon juice tastes best. You can also add a touch of red wine vinegar is you like your dressing on the sour side.
- Italian Seasoning - you should be able to find this is the spice area at your local grocery store.
- Parsley - you’ll want to use fresh, chopped parsley. You could also substitute cilantro or dill!
How to Make Cucumber Avocado Tomato Salad
- Make the dressing. To make the homemade dressing, add the olive oil, lemon juice, Italian seasoning, salt, pepper and parsley in a medium bowl and whisk well.
- Toss with the salad ingredients. In a separate large bowl, add the cherry tomatoes, avocado, onion and cucumber, then toss in the homemade dressing, or substitute ⅓ cup of Italian Dressing, and serve immediately. Enjoy!
Frequently Asked Questions
Yes, just hold off on dicing the avocado until just before you are ready to serve. You can pre-make the dressing, and pre-cut the cucumbers, tomatoes and onions and hold them separately in the fridge until you are ready to serve, or up to a day ahead of time.
Once you are ready, add the diced veggies into a large bowl. Dice the avocado, then add to the same bowl and whisk or shake the dressing well before adding. Mix everything to completely coat and serve immediately.
This salad really does taste (and look!) best fresh, however you can store any leftovers for up to 2 days in the fridge.
If you want to make enough for leftovers, we suggest adding the avocado in a separate bowl on the side so that it isn’t mixed in with everything else. That way, it won’t turn brown and mushy in the fridge!
Nope—cucumbers are not a member of the nightshade family of plants. Cucumbers belong to the squash family.
Recipe Variations
This salad is just begging to be adapted so that you can create any number of different versions. Here are a few ideas to get you started:
- Add shredded chicken, like this Cilantro Lime Shredded Chicken, to the salad for a little extra protein.
- Give it a Greek twist by adding about ½ cup of fresh feta cheese.
- Try adding a diced mango for a little sweetness and fruity flavor.
- Add your favorite southwestern ingredients to the mix, such as corn, canned green chilis, cilantro, and queso fresco.
- Try adding other mix-ins like chickpeas, dried cranberries, cooked and cooled orzo or quinoa, pine nuts, or pepitas.

Ingredients
- 1 cup Cherry Tomatoes washed and halved
- 1 large Avocado diced
- ½ med White Onion diced
- 1 large Cucumber peeled and diced into ¾" pieces
Dressing for Cucumber Avocado Salad
- 2 Tablespoons Olive Oil
- 2 Tablespoons Lemon Juice
- 1 teaspoon Italian Seasoning
- ¼ tsp Salt
- ⅛ teaspoon Pepper
- 1 Tablespoon Parsley chopped
Instructions
- To make the homemade dressing, add the the olive oil, lemon juice, Italian seasoning, salt, pepper and parsley in a medium bowl and whisk well.
