    This Cucumber Tomato Avocado Salad is crunchy, creamy and cool - just what you crave on a warm summer day.  It’s loaded with fresh vegetables, and lightly coated in a tangy homemade Italian lemon vinaigrette, perfect for a light lunch or a side dish for just about anything.

    Healthy Cucumber Tomato Avocado Salad

    We love this summer salad because it’s quick, easy, delicious and healthy to boot.  It’s sweet, salty, tangy, and full of creamy avocado, crunchy cucumber and fresh chopped tomatoes.  Plus, it’s naturally gluten-free, dairy-free and vegan!  Should we go on?

    This is a perfect side dish to serve with just about anything, or else each it solo with some fresh bread on the side for an easy al fresco lunch.

    We’ve had great success adding all sorts of different mix-ins to this base salad, as well, which we’ve listed below for you to try if you’d like.  Some of our favorites are adding shredded chicken, queso fresco and cilantro - yummy!  We've also got more homemade salad dressing recipes if you'd like.

    Ingredients in Cucumber Salad

    • Cherry Tomatoes - you can use red, yellow or purple.  Just be sure and wash them before cutting in half.
    • Avocado - you want to use a ripe avocado, which should give slightly when squeezed gently, but still feel a bit firm.
    • Onion - we like to use white onion, but red onion would taste great, too.
    • Cucumber - these should be peeled and diced into about ¾” pieces.
    • Olive Oil - you can also substitute avocado oil if you would like.
    • Lemon Juice - fresh lemon juice tastes best.  You can also add a touch of red wine vinegar is you like your dressing on the sour side.
    • Italian Seasoning - you should be able to find this is the spice area at your local grocery store.
    • Salt and Pepper - you can add this to taste.  We like sea salt best.
    • Parsley - you’ll want to use fresh, chopped parsley.  You could also substitute cilantro or dill!

    How to Make Cucumber Tomato Avocado Salad

    1. To make the homemade dressing, add the olive oil, lemon juice, Italian seasoning, salt, pepper and parsley in a medium bowl and whisk well.
    2. In a separate large bowl, add the cherry tomatoes, avocado, onion and cucumber, then toss in the homemade dressing, or substitute ⅓ cup of Italian Dressing, and serve immediately.  Enjoy!

    Can I Make Cucumber Tomato Avocado Salad Ahead?

    Yes, just hold off on dicing the avocado until just before you are ready to serve.  You can pre-make the dressing, and pre-cut the cucumbers, tomatoes and onions and hold them separately in the fridge until you are ready to serve, or up to a day ahead of time.

    Once you are ready, add the diced veggies into a large bowl.  Dice the avocado, then add to the same bowl and whisk or shake the dressing well before adding.  Mix everything to completely coat and serve immediately.

    How to Store Cucumber Tomato Avocado Salad

    This salad really does taste (and look!) best fresh, however you can store any leftovers for up to 2 days in the fridge.  

    If you want to make enough for leftovers, we suggest adding the avocado in a separate bowl on the side so that it isn’t mixed in with everything else.  That way, it won’t turn brown and mushy in the fridge!

    Recipe Variations

    • Chicken Cucumber Tomato Avocado Salad - add cooled shredded chicken, like this Cilantro Lime Shredded Chicken.  
    • Greek Cucumber Tomato Avocado Salad - add ½ cup of fresh feta cheese.
    • Mango Avocado Salad - add 1 ripe mango, diced.
    • Southwest Cucumber Salad - add your favorite southwestern ingredients, such as corn, canned green chilis, cilantro and queso fresco.
    • Other Mix-ins - try adding chickpeas, dried cranberries, cooked and cooled orzo or quinoa, pinenuts or pepitas.

    Ingredients

    • 1 cup Cherry Tomatoes washed and halved
    • 1 large Avocado diced
    • ½ med White Onion diced
    • 1 large Cucumber peeled and diced into ¾" pieces

    Dressing for Cucumber Avocado Salad

    • 2 Tablespoons Olive Oil
    • 2 Tablespoons Lemon Juice
    • 1 teaspoon Italian Seasoning
    • ¼ tsp Salt
    • ⅛ teaspoon Pepper
    • 1 Tablespoon Parsley chopped

    Instructions

    • To make the homemade dressing, add the the olive oil, lemon juice, Italian seasoning, salt, pepper and parsley in a medium bowl and whisk well.
    • In a separate large bowl, add the cherry tomatoes, avocado, onion and cucumber, then toss in the homemade dressing, or substitute ⅓ cup of Italian Dressing, and serve immediately. Enjoy!
