For the fish, I love to use these air fryer salmon bites because they are a little crispy on the outside but super flaky on the inside and only take a few minutes to cook. They can even be made ahead of time and warmed up when you are ready to assemble.

The peach salsa is sweet, spicy, tangy, and the perfect compliment to rich and buttery salmon. Top it all off with a drizzle of lime crema, close your eyes, and imagine you are at the beach.

  • Tomatoes: fresh diced tomatoes are mixed with the diced peach in the salsa.

  • Cilantro: cilantro is used in the peach salsa as well as for an optional garnish.
  • Sour Cream: the sour cream is mixed with fresh lime juice to make a crema that gets drizzled over the bowls.

How to Make Salmon Tacos With Peach Salsa

  1. Make the salmon bites. Prepare these salmon bites in the air fryer or oven.
  2. Make the peach salsa. Combine the diced peaches, red onion, jalapeno, cilantro, lime juice, and salt in a large bowl and mix well. Set aside.

  1. Make the lime crema. Whisk together the sour cream and lime juice and set aside.
  2. Heat the tortillas. Pan fry each tortilla in a little oil for about 30-45 seconds per side, or until golden and slightly crisp.
  3. Assemble the tacos. Inside each warmed taco add shredded cabbage, 2-3 salmon bites, peach salsa, and a drizzle of lime crema. Garnish with fresh cilantro.

Ingredients

Air Fryer Salmon Bites

Peach Salsa

  • 1/2 pound peaches, pitted and diced
  • 1/4 cup red onion, minced
  • 1/2 tablespoon jalapeno, minced
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, chopped
  • 1/4 teaspoon salt

Lime Crema

  • 1/2 cup sour cream
  • 1 teaspoon fresh lime juice

Other Taco Ingredients

  • 1 teaspoon avocado oil, for frying tortillas
  • 8 corn tortillas
  • 1 cup cabbage, or cole slaw mix
  • 2 tablespoons cilantro, chopped

Instructions
 

  • Prepare the air fried salmon bites according to the recipe and set aside.
  • To make the peach salsa: Wash and dry the peaches, remove the pits, and cut into ½-inch pieces. Add to a large mixing bowl along with the tomatoes, red onion, jalapeno pepper, cilantro, lime juice, and salt. Mix gently until well-combined. Set aside to let the flavors blend.
  • To make the lime crema: In a small bowl, whisk together the sour cream and lime juice until smooth.

Assemble the Salmon Tacos

  • Preheat a frying pan over medium heat and add 1 teaspoon of avocado oil. Fry each tortilla for 30-45 seconds per side, or until golden and slightly crispy. Transfer to a plate and cover with foil to keep warm.
  • Add a few tablespoons of cabbage or coleslaw mix to each of the warm tortillas. Top with 2-3 pieces of salmon bites, peach salsa, and a drizzle of lime crema. Garnish with fresh cilantro and enjoy immediately!
