This easy Ham and Cheese Quiche recipe uses pre-made pie crust for a quick breakfast. The creamy egg custard is layered with ham, cheese, green onions, and cheese.

Easy Ham and Cheese Quiche Recipe
Perfect for Easter breakfast, a weekend brunch, or just a lazy weekend at home, this ham and egg quiche is made super simple by using a premade pie crust. It's got a creamy egg and cheese custard full of diced ham, peppers, and onions that only takes a few minutes to prep before it hits the oven.
Around the holidays, this is also a great recipe for using up leftover ham. In fact, you can really play around with different meats, cheeses, and veggies to customize your quiche. Serve this with our quick and easy blender hollandaise sauce for a simplified quiche that still pulls out all the stops.
Main Ingredients Needed
- Eggs - the better the eggs, the better your quiche will taste! If you want to reduce the amount of yolks, you can substitute egg whites for half of the eggs.
- Butter - the butter is used for cooking the onions but it also adds loads of flavor to the custard.
- Onions - you will need either white or yellow onions that will be cooked in butter along with the peppers.
- Milk - to make the creamiest custard, use whole milk or even substitute half and half.
- Ham - dice your ham into small pieces. You can use leftover ham or sliced deli ham. Other great meat substitutes would be bacon or sausage.
- Shredded Cheddar Cheese - you will need half of the cheese to mix into the filling and half to sprinkle over the top just before baking. If you want to try different cheeses, mozzarella and/or goat cheese would be great.
- Red Bell Pepper - these should be cleaned and diced before using.
- Seasoning - I used garlic powder, salt, pepper, and crushed red pepper flakes.
- Bread - your bread should be cut into small cubes. I like to use French bread because it soaks up moisture really well. One little trick is to actually substitute shredded potatoes or sweet potatoes for the bread.
- Pie Crust - you can use a premade pie crust or make your own homemade pie crust if you want.
For the Blender Hollandaise Sauce
- Egg Yolks - reserve the whites for something else.
- Butter - salted or unsalted will work. If you use salted, reduce the additional salt by a bit.
- Lemon Juice - the lemon juice adds flavor and also helps to coagulate the yolks.
- Hot Water - you may need a little more or less hot water, so be sure to have enough on hand but pour slowly because you might not need it all.
- Seasoning - I used salt, pepper, and cayenne powder
How to Make Easy Ham and Cheese Quiche
- Prepare the pie crust. Take the pie crust out of the fridge and let it get to room temperature (or make the crust if you are making it from scratch).
- Cook the onions. Cook the onions in the butter until they reach a light caramel color.
- Whisk together the custard filling. Whisk together the eggs, then add the milk, ham, cheese, peppers, and seasoning.
- Line the pie dish with the crust. Roll the pie crust out and lay it on a 9" pie plate. Fit the pie crust into the pan. Using your fingers, pinch the edges to make a decorative edge, (optional)
- Assemble the quiche. Add the cubed bread to the pie plate and pour the egg mixture on top. Sprinkle the remaining cheese on top of the egg mixture.
- Bake. Bake for 60 minutes or until the edges of the egg mixture are golden brown. Let it cool for 5 minutes before serving. Serve with a drizzle of the hollandaise sauce. Enjoy!

You can make your own pie crust, but this is also a great recipe to take a little shortcut and use a premade crust instead. If your pie crust if frozen, take it out of the freezer and let it thaw to room temperature before you unroll it.
If your pie crust is in the fridge, set it on the counter for about 30 minutes before you need it to give it a chance to come up to room temperature before attempting to unroll it.
Yes! This quiche can be made 24 hours ahead of time and stored in the fridge until you're ready to bake it. If you do make this ahead of time, just be sure to remove it from the fridge about 20 minutes before you bake it so that the egg mixture and the pie plate have a chance to come to room temperature a bit.

- 8 large Eggs
- 1 Tablespoon Butter
- ½ cup Onions white or yellow; minced
- 1 cup Milk
- ½ cup Ham diced
- ⅔ cup Shredded Cheddar Cheese reserve half for the top
- ½ large Red Bell Pepper diced
- ½ teaspoon Garlic Powder
- ½ teaspoon Salt
- pinch Pepper
- pinch Crushed Red Pepper
- 2 cups French Bread cubed
- 1 regular Pie Crust
Easy Blender Hollandaise Sauce
- 3 large Egg Yolks
- 1 cup Butter
- 1 Tablespoon Lemon Juice
- 1-3 Tablespoons Hot Water
- 1 pinch Salt
- 1 pinch Pepper
- 1 pinch Cayenne Pepper
Instructions
- Take the pie crust out of the fridge and let it get to room temperature.
- Preheat oven to 350 degrees
- In a small saucepan, melt the butter and add the onions. On medium heat, cook the onions until they are a light caramel color.
- Crack the eggs into a medium-sized mixing bowl.
- Add to the eggs in the mixing bowl, milk, ham, cheese, minced red pepper, garlic powder, salt, pepper, and crushed red pepper. Whisk with a fork until the yolks are broken and the ingredients are combined.
- Roll the pie crust out and lay it on a 9" pie plate. Fit the pie crust into the pan. Using your fingers, pinch the edges to make a decorative edge, (optional)
- Add the cubed bread to the pie plate and pour the egg mixture on top. Sprinkle the remaining cheese on top of the Egg mixture.
- You can make this up to 24 hours ahead of time or bake soon after assembly.
- Bake for 60 minutes or until the edges of the egg mixture are golden brown. Let it cool for 5 minutes before serving. Serve with a drizzle of the hollandaise sauce. Enjoy!
How to make Easy Blender Hollandaise Sauce
- In a small saucepan or microwave, melt the butter.
- In a blender, blend the 3 egg yolks for 2 min. Turn the blender on low and slowly drizzle the butter into the egg yolk mixture (should take about 30-60 seconds) slowly add the lemon juice and the hot water. Add the pinch of salt, pepper and cayenne pepper while blending.
- If you want your hollandaise a little thinner in consistency, slowly add 1-2 Tablespoons of hot water.
