Brie Puff Pastry Bites
Looking for a quick and easy appetizer for a special occasion? These Brie cheese puff pastry bites can be ready in about 30 minutes even though they look super fancy! Squares of puff pastry dough are stuffed with Brie cheese, fig jam, and Gorgonzola cheese before performing a (very simple) slicing and folding technique.
The combination of flakey and buttery puff dough with sweet fig jam, salty Gorgonzola, and melted Brie is incredible. They’re perfect for serving as an appetizer for fall and winter holiday parties as well as game day parties.
If you don’t have fig jam or want to try another type of flavor, these Cranberry Brie Bites made with phyllo dough are also delish.
Key Ingredients
- Puff Pastry - you will need to thaw the frozen puff pastry before you can use it, but you still want it to be chilled. The best way to do this is to just transfer it to the fridge overnight. Each sheet will make 9 brie bites.
- Brie Cheese - each brie bites uses about ½ ounce of cheese, so to make a full recipe you will need 8 ounces total. You can leave the rind on!
- Fig Jam - brie cheese is fairly mild and pairs well with a fruity jam like this easy homemade Fig Jam. Apricot and raspberry jams would also taste great.
- Gorgonzola Cheese - I absolutely love the flavor contrasts of sweet fig jam, creamy brie cheese, buttery puff pastry, and a salty blue cheese like Gorgonzola. If you aren’t a fan of blue cheese, goat cheese would also taste great.
- Egg Wash - egg wash does a couple of things to these brie bites. It creates a nice shine on them once they are baked, but it also helps the little sea salt flakes stick while they bake.
How to Make Brie Bites with Fig
- Cut the puff pastry squares. Unfold the thawed puff pastry sheets and lay them out on a flat, lightly floured surface. Use a knife to cut along the fold marks to create three equal sized strips. Cut each strip in thirds to make a total of 9 squares for each sheet.
- Prepare the squares for the filling. Use a paring knife to cut 2 opposing corners of the puff pastry, about ½" in from the edges (see picture above for details). Use a fork to poke a few holes into the circles of each pastry.
- Add the fillings. In the center of each puff pastry square, add a slice of brie cheese topped with about ½ tablespoon of fig jam and a sprinkle of Gorgonzola cheese. Fold each corner of the puff pastry over to create a diamond shape.
- Egg wash. Whisk together the egg and water in a small bowl, then use a pastry brush to brush all of the exposed areas of the puff pastry. Sprinkle a little sea salt on top of each pastry.
- Bake. Bake in your preheated oven for 12-18 minutes, until golden brown. Remove from the oven and cool on a baking rack for at least 5 minutes (or completely) before serving. Enjoy!
Frequently Asked Questions
While I do not recommend baking these ahead of time, you can prepare them up to 1-2 days in advance and store them in the fridge until you are ready to bake. If you wanted to prepare them even further ahead, you could actually freeze them for up to 2 months, then transfer to the fridge overnight to thaw before baking the next day.
The rind from Brie cheese is edible and will be mostly indistinguishable once these are baked. For that reason, I don’t recommend cutting it off because you will just be throwing away good cheese!
Brie bites should ideally be eaten soon after they have been baked because they will lose a lot of their flakiness once you try to reheat them. With that being said, you can reheat them in a preheated oven for a few minutes if you have a lot of leftovers. I don’t recommend using the microwave because it will turn them soggy.
Recipe Notes and Tips
- Another quick way to assemble these Brie cheese bites is to place each puff pastry square into a lightly greased mini muffin tins, then add the toppings. This will eliminate the need to slice the corners and fold each into a diamond shape.
- If you aren’t a huge fan of Gorgonzola cheese, you could substitute goat cheese. It will give this more of a tangy flavor rather than salty but it will still be super delicious.
- These Brie and fig bites can be eaten either warm or at room temperature.
- Brie bites lose a lot of their magic when you try to reheat them. They will still taste good, but you’ll lose that light and flakey texture from the puff pastry.
- You can also make brie bites with phyllo dough. They will be a little more flaky and a little less buttery but still super tasty. These Cranberry Brie Bites are made that way.
Brie and Fig Bites Recipe
Ingredients
- 2 sheets Puff Pastry thawed
- 8 ounces Brie Cheese cut into 18 equal pieces
- ⅓ cup Fig Jam
- 3 Tablespoons Gorgonzola Cheese
Egg Wash
- 1 large Egg
- 1 Tablespoon Water
- ½ Tablespoon Sea Salt Flakes
Instructions
- Preheat the oven to 400 degrees F.
- Unfold the thawed puff pastry sheets and lay them out on a flat, lightly floured surface. Use a knife to cut along the fold marks to create three equal sized strips. Cut each strip in thirds to make a total of 9 squares.
- Arrange the puff pastry squares on a parchment paper lined baking sheet with at least 1" between each pastry.
- Use a paring knife to cut 2 opposing corners of the puff pastry, about ½" in from the edges (see picture above for details). Use a fork to poke a few holes into the circles of each pastry. This allows the outside border to rise and puff up while the center stays lower and holds the filling.
- In the center of each puff pastry square, add a slice of brie cheese topped with about ½ tablespoon of fig jam and a sprinkle of Gorgonzola cheese.
- Dip your finger into a small bowl of cold water, take each cut corner of the puff pastry, and fold over to create a diamond shape.
- Whisk together the egg and water in a small bowl, then use a pastry brush to brush all of the exposed areas of the puff pastry. Sprinkle a little sea salt on top of each pastry.
- Bake in your preheated oven for 12-18 minutes, until golden brown.
- Remove from the oven and cool on a baking rack for at least 5 minutes (or completely) before serving. Enjoy!
