- 4 cups watermelon cut into 1" pieces
- 2 cups cantaloupe scooped or cut into 1" pieces
- 2 cups honeydew scooped or cut into 1" pieces
- 1/3 cup mint leaves sliced thin
Mojito Glaze
- 2 tablespoons olive oil
- 2 tablespoons strawberry jam
- 3 tablespoons fresh lime juice
- 1 teaspoon lime zest
Cut the watermelon, cantaloupe, and honeydew into 1" cubes (or use a melon baller) and add to a large serving bowl along with the sliced mint.
In a small bowl, whisk together the olive oil, strawberry jam, lime zest, and lime juice.
Drizzle the glaze over the melons and toss to coat. Serve chilled. Enjoy!
Storing instructions: store in an airtight container in the fridge for up to 3 days.
