This Mojito melon fruit salad is the perfect summer salad, filled with three kinds of melon and a refreshing mint and lime glaze. Enjoy at your next BBQ, party, or dinner at home.

Ingredients

  • 4 cups watermelon cut into 1" pieces
  • 2 cups cantaloupe scooped or cut into 1" pieces
  • 2 cups honeydew scooped or cut into 1" pieces
  • 1/3 cup mint leaves sliced thin

Mojito Glaze

  • 2 tablespoons olive oil
  • 2 tablespoons strawberry jam
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest

Instructions

  • Cut the watermelon, cantaloupe, and honeydew into 1" cubes (or use a melon baller) and add to a large serving bowl along with the sliced mint.
  • In a small bowl, whisk together the olive oil, strawberry jam, lime zest, and lime juice.
  • Drizzle the glaze over the melons and toss to coat. Serve chilled. Enjoy!

Notes

Storing instructions: store in an airtight container in the fridge for up to 3 days.
Make-ahead tips: You can make this salad the night before, cover with plastic wrap, and store in the fridge until the following day.
