Key Ingredients You Will Need

  • Salmon Bites: you will need about 1 pound of salmon to make the salmon bites. You can refer to this recipe for more details on preparing the salmon to make the salmon bites.
  • Peaches: be sure to use incredibly fresh peaches so that they are sweet and juicy. 
  • Tomatoes: fresh diced tomatoes are mixed with the diced peach in the salsa.
  • Fresh Limes: you will need fresh limes for quite a bit in this recipe so plan on getting about 3 fresh limes.
  • Cilantro: cilantro is used in the peach salsa as well as for an optional garnish.
  • Rice: either short grain or long grain rice will work fine. Refer to the package for instructions if necessary, but for the easiest method I recommend using the rice cooker.
  • Green Chilis: I love adding these to the lime rice to add a little spiciness.
  • Sour Cream: the sour cream is mixed with fresh lime juice to make a crema that gets drizzled over the bowls.

How to Make Salmon Bowls

  1. Make the salmon bites. Prepare these salmon bites in the air fryer or oven.
  2. Make the peach salsa. Combine the diced peaches, red onion, jalapeno, cilantro, lime juice, and salt in a large bowl and mix well. Set aside.

  1. Make the lime rice. Add the ingredient to a rice cooker and set to “white rice” setting. Once finished, fluff and stir in the fresh lime juice.
  2. Make the lime crema. Whisk together the sour cream and lime juice and set aside.
  3. Assemble the bowls. Add about 3/4 cup of rice to each bowl. Top with a few tablespoons of cabbage or coleslaw mix. Add 3-4 large pieces of salmon bites. Spoon on peach salsa and drizzle with lime crema.   Garnish with fresh cilantro and enjoy immediately!

Frequently Asked Questions

What kind of rice should I use?

Truly any kind of rice works here—long grain, short grain, brown rice, etc. It’s completely up to you. I particularly love the flavor and texture of jasmine rice with the rest of the flavors here. Quinoa or even cauliflower rice would work, too.

Can you make these ahead of time?

Yes! In fact I highly recommend it! The salmon can be stored for up to 3 days while the rest of the components can be prepped the day before. This makes lunch or dinnertime a breeze!

Should the salmon be eaten warm or cold?

This is totally up to you. I personally prefer to eat it warm, but it is honestly delicious either way. If you want to heat it up quickly and have an air fryer, just pop the salmon in for a minute or two and voila!

Recipe Tips

  • Use an air fryer to get the salmon bites crispy on the outside but tender on the inside. It is also a convenient way to reheat them! 
  • Meal prep! Save yourself some time and make the salmon, rice, and crema ahead of time. The peach salsa tastes best fresh, but it could also be made the night before if you really want.
  • Mix up the flavors a little bit. Try using different spice rubs for the salmon, ingredients in the rice, and adding different toppings.

Storage Instructions

  • Refrigerator: store any leftover salmon in an airtight container in the fridge for up to 3 days. The peach salsa, lime rice, and crema can be stored overnight in the fridge as well.

Ingredients

Sweet and Spicy Salmon Bites

Homemade Peach Salsa

  • 1/2 pound peaches, pitted and diced
  • 1/2 pound tomatoes, diced
  • 1/4 cup red onion, minced
  • 1/2 tablespoon jalapeno, minced
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, chopped
  • 1/4 teaspoon salt

Lime Rice

  • 2 cups rice, long grain or short grain
  • 4 cups chicken broth
  • 1 4-ounce can green chilis, drained
  • 3 tablespoons butter
  • 2 teaspoons garlic, minced
  • 2 tablespoons lime juice

Lime Crema

  • 1/2 cup sour cream
  • 1 teaspoon lime juice

Other Ingredients

  • 1 cup shredded cabbage, or coleslaw mix
  • 2 tablespoons cilantro, chopped

Instructions
 

  • Prepare the air fried salmon bites according to the recipe and set aside.
  • To make the peach salsa: Wash and dry the peaches, remove the pits, and cut into ½-inch pieces. Add to a large mixing bowl along with the tomatoes, red onion, jalapeno pepper, cilantro, lime juice, and salt. Mix gently until well-combined. Set aside to let the flavors blend.
  • To make the lime rice: Add the rice, chicken broth, green chilis, butter, and garlic to a rice cooker. Cover and set to "white rice" setting, then do not open the lid until it has finished cooking. Once cooked, add the fresh lime juice, then fluff and stir with a fork.
  • To make the lime crema: In a small bowl, whisk together the sour cream and lime juice until smooth.

Assemble the Salmon Bowls

  • Preheat a frying pan over medium heat and add 1 teaspoon of avocado oil. Fry each tortilla for 30-45 seconds per side, or until golden and slightly crispy. Transfer to a plate and cover with foil to keep warm. Repeat with all tortillas.
  • Add about 3/4 cup of rice to each bowl. Top with a few tablespoons of cabbage or coleslaw mix. Add 3-4 large pieces of salmon bites. Spoon on peach salsa and drizzle with lime crema. Garnish with fresh cilantro and enjoy immediately!

Notes

Storing instructions: Store leftover salmon in an airtight container in the fridge for up to 3 days. Peach salsa is best fresh but can be refrigerated for up to 24 hours.
Reheating: to reheat salmon bites in the air fryer, wrap the salmon in foil and heat in a 350 degree air fryer for just a few minutes.
Oven Baked Salmon: Place the salmon bites on an aluminum foil-lined baking sheet.  Bake in a preheated 425-degrees F oven for 4-5 minutes.  
You can also bake this as a full filet—just don’t cut into individual portions before cooking. The cooking time will be closer to 10 minutes.
