Authentic Carne Asada Recipe

This easy and delicious recipe makes authentic carne asada.  It is grilled to perfection and full of amazing Mexican-inspired flavors.

Ingredients

  • 2 pounds flank steak or skirt steak

Carne Asada Marinade

  • 2 tablespoons avocado oil
  • 2 tablespoons garlic minced
  • 1/4 cup orange juice
  • 2 tablespoons lemon juice
  • 2 tablespoons lime juice
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large jalapeno deseeded and minced
  • 1/2 bunch cilantro chopped

For Tacos

  • 12 small corn tortillas
  • 1/2 cup shredded cheese
  • 1/3 cup sour cream
  • 1/2 cup salsa
  • 1 large lime cut into wedges for serving

Instructions

Marinating the Steak

  • Use a tenderizing mallet or the bottom of a pan, pound the steaks on each side. Add them to a large freezer bag along with the avocado oil, garlic, orange juice, lemon juice, lime juice, cumin, garlic powder, oregano, salt, pepper, minced jalapeno, and chopped cilantro leaves. Seal the bag and shake well, then transfer to the fridge to marinate for at least 2 hours, or up to 24 hours.

Cooking the Carne Asada

  • Preheat the grill to medium high.
  • Remove steak from the marinade and place onto the hot grill over medium-high flames. For thicker flank or skirt steak cooked medium-rare, grill for about 7-10 minutes (flipping them over halfway through the cooking time). For medium, cook for about 10-12 minutes.
  • Transfer the cooked steak to a cutting board and let rest for about 5 minutes before slicing against the grain. Serve in warm tortillas with your favorite taco toppings. Enjoy!

Notes

Storing instructions: store leftovers in an airtight container in the fridge for up to 4 days. 
Reheating: to reheat, transfer to a saute pan with a little oil and heat over medium until warmed through.
You can substitute 6" flour tortillas for the corn tortillas.
Cooking Times: 
  • for thicker flank or skirt steak cooked medium-rare: 7-10 minutes (130 degrees F)
  • for thicker flank or skirt steak cooked medium: 10-12 minutes (140 degrees F)
  • for pre-sliced carne asada, cook for 2-3 minutes until seared
