These Strawberry Brownie Dessert Kabobs are a quick, easy, and fun dessert that’s perfect for summertime. There’s no baking or cooking involved—just fresh fruit, brownie bites, marshmallows, and chocolate drizzle.

Ingredients

  • 24 whole strawberries
  • 12 mini brownie bites
  • 12 large marshmallows
  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil
  • sprinkles optional

Instructions

  • Wash and dry the strawberries, then set aside.
  • Onto each kabob stick, add a strawberry, brownie bite, marshmallow, and another strawberry.
  • Add the chocolate chips and the coconut oil to a microwave safe bowl. Microwave on high for 30 seconds, stir, and repeat until the chocolate is melted and smooth.
  • Drizzle the chocolate onto the kabobs and sprinkle with festive sprinkles. Enjoy!

Notes

  • For the strawberries, you can take the stems off of the strawberries or leave them on.
  • Storing leftovers: While it’s best to enjoy these soon after you have assembled them, you can store leftovers in an airtight container overnight in the fridge.
  • Make-ahead instructions: you don’t want to completely assemble these ahead of time, but you could add the brownies and marshmallows to the skewers. Wrap them in plastic wrap and store overnight at room temperature, or in the fridge. The next day, you can melt the chocolate, add the strawberries, and decorate.
