Spicy Roasted Sweet Potato Cubes Recipe

These roasted sweet potatoes are a great side dish to serve with just about any protein. They're coated with a sweet and spicy mix of chili powder, paprika, onion powder, maple syrup, and coconut oil, then oven roasted until tender.

Ingredients

  • 3 pounds sweet potatoes peeled and cut into 3/4" pieces
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large lime

Instructions

  • Preheat oven to 400 degrees F. 
  • Wash, peel, and cut sweet potatoes into 3/4" pieces and transfer to a mixing bowl. Add the coconut oil, maple syrup, chili powder, paprika, onion powder, salt, and pepper to the bowl with the potatoes and stir well to coat evenly.
  • Transfer potatoes to a parchment paper lined baking sheet in a single layer.
  • Bake in your preheated oven for about 45 minutes, turning the potatoes about halfway through the cooking time.
  • Once they are fork tender, remove from the oven and squeeze with fresh lime juice. Enjoy!

Notes

Storing leftovers: store any leftover roasted sweet potato chunks in an airtight container in the fridge for up to 3 days.
Reheating: reheat in a preheated 350 degree oven for about 10 minutes, or until warm.
