Spicy Roasted Sweet Potato Cubes Recipe
These roasted sweet potatoes are a great side dish to serve with just about any protein. They're coated with a sweet and spicy mix of chili powder, paprika, onion powder, maple syrup, and coconut oil, then oven roasted until tender.

- 3 pounds sweet potatoes peeled and cut into 3/4" pieces
- 1 tablespoon coconut oil
- 1 tablespoon maple syrup
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large lime
Preheat oven to 400 degrees F.
Wash, peel, and cut sweet potatoes into 3/4" pieces and transfer to a mixing bowl. Add the coconut oil, maple syrup, chili powder, paprika, onion powder, salt, and pepper to the bowl with the potatoes and stir well to coat evenly.
Transfer potatoes to a parchment paper lined baking sheet in a single layer.
Bake in your preheated oven for about 45 minutes, turning the potatoes about halfway through the cooking time.
Once they are fork tender, remove from the oven and squeeze with fresh lime juice. Enjoy!
Storing leftovers: store any leftover roasted sweet potato chunks in an airtight container in the fridge for up to 3 days.
Reheating: reheat in a preheated 350 degree oven for about 10 minutes, or until warm.
