Roasted Garlic Lemon Broccoli Recipe

This roasted garlic lemon broccoli is hands-down the best way to prepare broccoli. The broccoli is tossed in a little avocado oil, seasoned with minced garlic and then freshly squeezed lemon juice when it's finished roasting in the oven.

Ingredients

  • 2 pounds broccoli florets
  • 2 tablespoons avocado oil
  • 1 tablespoon garlic minced
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat the oven to 400 degrees F.
  • Cut broccoli into evenly sized 1" pieces. Using a hand towel, pat-dry the washed broccoli then place in a large freezer bag.
  • Add the oil and minced garlic, toss well, then spread onto a baking sheet in a single layer. Season with salt and pepper.
  • Roast in your preheated oven for 20-25 minutes, or until fork tender and lightly golden on the edges.
  • Remove from the oven and squeeze fresh lemon juice over the top. Season with salt and pepper to taste and serve warm. Enjoy!

Notes

Storing leftovers: store roasted lemon garlic broccoli in an airtight container in the fridge for up to 3 days.
Reheating: you can either microwave or toss in a preheated saute pan with a bit of olive oil until warm.
