Lemon Ginger Ice Cubes
- 8 lemons rinsed and peeled
- 12 inches ginger root cut into 1" pieces
- 1 cup water (plus more if needed)
For Each Serving of Honey Lemon Ginger Tea
- 8 ounces boiling water
- 1 teaspoon honey
- 1 lemon ginger ice cube
Rinse the lemons then carefully remove and discard the peel and rind. Roughly cut the fresh lemon into quarters, and add to a blender along with the peeled 1" pieces of fresh ginger.
Add the water and blend until smooth, adding a little extra water as needed until the mixture has a smoothie consistency.
Place a fine mesh strainer over a large bowl and squeeze to strain off as much juice as possible. Discard the pulp and continue straining until you have captured all of the juice.
Pour the lemon ginger juice into ice cube tray molds and freeze. Once frozen, transfer the frozen cubes to freezer bags.
To Make the Honey Lemon Ginger Tea
- Storing Instructions: store frozen cubes of lemon ginger tea for up to 6 months in the freezer.
- Storing in the refrigerator: if you plan on making just a small batch of tea you can store the lemon and ginger juice in an airtight container in the fridge for up to 1 week.
