- 4 large russet potatoes washed
- 3 tablespoons avocado oil
- 4 teaspoons salt
Preheat oven to 400 degrees F.
Using a fork, poke 6-10 holes, about a 1/2" deep, into each potato. Put the potatoes in a large ziplock bag with the avocado oil. Seal the bag and roll the potatoes around inside the bag until all the potatoes are covered in oil.
Place potatoes onto a 9" by 13" baking dish or cookie sheet lined with aluminum foil or parchment paper. Sprinkle sea salt all over each potato, making sure to get the sides, too.
Bake for 50-60 minutes, or until a fork inserted does not stick. Remove from the oven and slice open. Use a fork to lightly fluff the insides and serve with your favorite toppings. Enjoy!
Make Ahead: Bake the potatoes as directed, then keep them warm in a slow cooker until you're ready to serve. For large gatherings, place the cooked potatoes in an insulated cooler to keep them warm.
Reheating: Cut the potato into 1-inch pieces and microwave in 30-second intervals until heated through.
Microwave Method: Place the potato on a microwave-safe plate and cook until fork tender, adding extra time as needed for larger potatoes. Let the potato rest for 5 minutes, then slice it open and fluff the inside with a fork.
Slow Cooker Method: Pierce the potatoes several times with a fork, rub with oil, sprinkle with salt, and wrap in foil. Cook on high for 4½–5 hours or low for 7½–8 hours, or until tender.
