- 2 pounds carrots cut into 1/2" slices
- 1 tablespoon olive oil
- 3 tablespoons butter
- 3 tablespoons light brown sugar
- 3 tablespoons honey
- 1/4 teaspoon salt
- 1/4 cup parsley chopped for garnish
In a medium saucepan, add enough water to cover all of the sliced carrots by 2-3" and bring to a boil.
Add the carrots, return to a simmer, and cook for about 8-10 minutes, or until fork tender. Drain the water and return the carrots to the pan.
Add the olive oil, butter, brown sugar, honey, and salt to the pot with the carrots and toss to coat. Heat over medium for another 3-5 minutes, stirring occasionally, until the sauce has thickened.
Remove from heat, sprinkle chopped parsley over the top for garnish, and serve immediately. Enjoy!
Storing leftovers: store in an airtight container in the refrigerator for up to 4 days, or in the freezer for up to 2 months. To thaw, transfer to the fridge overnight.
Reheating: gently rewarm carrots in a saute pan over medium heat with a splash of honey and oil. Or, transfer to a sheet tray and warm in a preheated 450 degree oven for about 5 minutes.
