Homestyle Chicken Noodle Soup Recipe

The entire family will love this quick and easy 30 minute chicken noodle soup recipe!  It uses only 6 ingredients.  You can have it on the dinner table in no time!

Ingredients

  • 3 quarts chicken broth
  • 3 cups carrots sliced into 1/4" slices
  • 12 ounces egg noodles
  • 1 can cream of chicken soup
  • 2 cups rotisserie chicken cut into bite sized cubes
  • 1 cup peas
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • In a large pot over medium heat, pour in the chicken broth. Add the carrots to the chicken broth while the chicken broth is coming to a boil. 
  • As soon as the chicken broth is boiling, add the noodles and the cream of chicken soup.
  • Turn the heat down to medium so the broth doesn't boil over. Bring to a boil and cook the noodles in the broth according to package directions, 12-15 minutes. 
  • When the noodles are done, add chicken and the peas and stir in until completely warm.  Garnish with fresh chopped parsley and serve warm. Enjoy!

Notes

Storing instructions: If you don't plan to eat the soup right away, cook the noodles separately and store them in a bag or covered container until you're ready to serve. Keep the soup in a sealed covered container for up to 5 days. To store frozen, add to freezer bags and store for up to 2 months in the freezer.
Reheating:  When you're ready to re-heat the chicken noodle soup, let it thaw in the fridge.  Add it to a pot on the stove and heat it slowly until all the ingredients come up to serving temperature.  Add noodles if desired and a little more chicken broth if needed.
A full bag of noodles makes a huge pot of soup—enough to feed 8-10 people.
While the noodles are boiling, be sure to taste the broth and make sure it has the flavor you want. If it's too strong, add some water. Season with salt and pepper, and the "better than bouillon" if needed. Every chicken broth is a little different so it works best to taste test it.
