Ingredients
1½cupscucumberpeeled and grated (about 1 whole cucumber)
Peel and grate the cucumber using a box grater. Transfer cucumber to a bowl lined with cheesecloth and allow to sit while you prep the rest of the ingredients.
Once you are ready, squeeze excess liquid from the cucumber through the cheesecloth and discard. In a food processor, add the Greek yogurt, grated cucumber, olive oil, lemon zest, lemon juice, minced garlic cloves, salt, pepper, and parsley, then mix until combined.
Transfer to a glass jar or other airtight container and store for up to 5 days in the fridge. Serve with veggies, pita chips, or on your favorite wrap or sandwich. Enjoy!
