- 5 pounds red potatoes
- 1 tablespoon salt (for boiling water)
- 3 tablespoons butter room temperature
- 2/3 cup sour cream
- 1 tablespoon salt
- 1 teaspoon garlic powder
- 1/2 cup Parmesan cheese shredded
- 1/2 cup milk
Wash, peel, and cut the potatoes into 1" cubes, then place in a large pot along with 2 teaspoons of salt. Cover with cold water and bring to a boil. Continue to boil potatoes for 20-30 minutes, or until they are fork-tender.
Once cooked, drain the water. Add the potatoes back to the pot, then add in your butter, sour cream, salt, garlic powder, Parmesan cheese, and milk.
Mash potatoes with a hand masher, getting out all of the largest chunks. You can keep mashed potatoes as chunky or as smooth as you like.
Transfer to a serving bowl and finish with a pat of butter and chopped parsley. Enjoy!
