Fig and Prosciutto Crostini Recipe

These fig and prosciutto crostini are a quick and easy appetizer—perfect for serving during the holidays or as a snack at home. Topped with Gorgonzola cheese, honey, and toasted pistachios, they are sweet, salty, and delicious.

Ingredients

  • 2 tablespoons pistachios toasted
  • 1 small baguette cut into 1/2" slices
  • 6 slices prosciutto cut in half lengthwise
  • 6 large figs cut into slices
  • 4 ounces Gorgonzola cheese
  • 2 tablespoons honey

Instructions

  • Preheat oven to 400 degrees F.
  • Chop pistachios roughly and then add to a saute pan over medium heat. Toast until fragrant and lightly golden brown, stirring frequently so that they don't burn. Set aside to cool.
  • Place the baguette slices onto a small baking sheet and toast in your preheated oven for 6-7 minutes, or until the edges are golden brown. Remove from the oven and cool for a few minutes.
  • Place the toasted crostini on a platter, then add a half slice of prosciutto, 3-4 slices of fig, and about 1/2 tablespoon of Gorgonzola cheese to each piece. Drizzle with honey and top with toasted pistachios. Enjoy!

Notes

Storing instructions: assembled crostini should be eaten the same day. Store toasted baguettes in an airtight container at room temperature for up to 3 days. The figs, Gorgonzola cheese, and prosciutto can be stored in separate containers in the fridge for up to 3 days before using to assemble more crostini.
