- 1 cup butter
- 1 cup sugar
- 1 cup light brown sugar
- 2 large eggs
- 2 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3¾ cup all-purpose einkorn flour
- 2 cups chocolate chips
Preheat oven to 350 degrees F.
Cream together butter and sugars, then slowly add the eggs and vanilla and mix on low. In a separate bowl, whisk together the baking soda, salt, and flour and then stir into the butter mixture.
Bake at 350 degrees F for 8-10 minutes, or until golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooking rack. Enjoy!
Storing instructions: store cookies in an airtight container at room temperature for to 3-4 days, or in the freezer for up to 3 months.
Make-ahead tips: cookie dough can be stored in the fridge overnight or in the freezer for up to 2 months. To bake from frozen, pull out to room temperature while you preheat the oven and bake as directed.
