Easy Ham Fried Rice Recipe
This ham stir fry recipe is loaded with veggies and a perfect way to use up leftover ham and leftover rice. It can easily be adapted so the entire family will love it! It's so much better than takeout and can be ready in under 30 minutes.

- 2 tablespoons butter
- 3 large eggs
- 2 tablespoons avocado oil
- 1/2 cup onion diced
- 2 tablespoons garlic minced
- 1 cup carrots diced
- ½ cup broccoli
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 4 cups cooked rice cold
- 1 cup ham cut into 1/2" pieces
- 3 tablespoons teriyaki sauce
- 1 tablespoon sesame oil
In a wok or nonstick saute pan on the stove, add the butter and melt over medium low heat. Once melted, add the eggs and scramble until cooked. Transfer to a plate and set aside.
In the same pan, add about 1 tablespoon of oil and heat over medium heat. Add the onion and cook until transparent—about 3-5 minutes. Add the garlic and cook for another minute, then add in the carrots and broccoli and cook for a few minutes until just barely tender. Season with salt and pepper.
Move the vegetables to the side of the pan and add a little more oil, followed by the chilled rice. Mix it in with the veggies and then add the diced ham.
Mix it all together, then let the rice and veggies on the bottom of the pan become golden brown before stirring. Once golden, stir briefly and then repeat until the rice is a little more "fried."
Remove from the heat and add the teriyaki sauce and sesame oil. Season with additional salt and pepper as needed, then mix in the scrambled eggs. Serve warm. Enjoy!
Storing leftovers: store leftovers in the fridge for up to 3 days, or in the freezer for up to 2 months.
Reheating: you can reheat in the microwave or in a small pan over medium heat. It's best to add a touch of water or broth.
