This corn salsa is sweet, crunchy, zesty and oh-so-easy to make. Full of sweet corn, cilantro, fresh lime juice and crisp veggies, it’s the perfect summer salsa to serve with tortilla chips, or to add to tacos, burrito bowls and more.

- 3 cups super sweet white corn
- 1/2 large red onion diced
- 1½ medium bell peppers diced (any color)
- 1/4 cup cilantro chopped
- 2 large limes juiced
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
In a large mixing bowl, combine the corn, red onion, bell peppers, cilantro, lime juice, garlic powder, salt, and pepper. Mix until combined.
Refrigerate until ready to serve. Serve with your favorite corn tortilla chips. Enjoy!
For the corn, you can use fresh corn, or frozen corn that has been thawed and drained.
Storing leftovers: store leftover corn salad in an airtight container in the fridge for up to 2 days.
