Double Chocolate Banana Bread

- 1½ cups ripe bananas (about 3 bananas)
- 6 tablespoons butter melted
- 2 large eggs room temperature
- 1/4 cup Greek yogurt
- 1 teaspoon vanilla extract
- 1¾ cups all-purpose flour
- 1/4 cup cocoa powder
- 3/4 cups sugar
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 8 ounces chocolate chips (divided)
Preheat the oven to 350 degrees F.
Spray 2 bread loaf pans generously with nonstick cooking spray and set aside.
In a large mixing bowl, add the very ripe bananas and mash using a fork. Add the melted butter, eggs, Greek yogurt, and vanilla. Mix until the eggs are incorporated into all the other ingredients.
In a separate mixing bowl, combine the flour, cocoa powder, sugar, baking soda, and salt. Whisk until combined.
Add the banana mixture to the flour mixture and stir gently. Add about 6 ounces of the chocolate chips, mixing until all the ingredients are combined. Do not over mix.
Pour the chocolate banana bread batter into the greased bread pans and sprinkle the remaining chocolate chips on top.
Bake in your preheated oven for 50-65 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the bread cool for a few minutes before slicing into it. Enjoy!
Storing instructions: store in an airtight container at room temperature for up to 2 days, in the fridge for up to 1 week, or in the freezer for up to 3 months.
Make-ahead tips: you can make the batter a day in advance, divide the batter into the pans, and store it in the fridge overnight. When you are ready to bake, remove the pan from the fridge and let sit out at room temperature for at least 30 minutes while you preheat the oven.
