Creamy Sausage Tortellini Soup Recipe

Ingredients

  • 1 pound ground sausage mild or hot
  • 1/3 cup water
  • 1 medium onion diced
  • 1 28-ounce can crushed Marzano Italian tomatoes
  • 4 cups chicken broth
  • 8 ounces cream cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 19 ounces frozen tortellini or fresh
  • 3 cups fresh spinach

Instructions

  • Heat a large pot over medium heat, then add the ground sausage with the water. Use a wooden spoon to break the meat up into small pieces and cook until no longer pink.
  • Drain the fat and place the sausage onto a paper towel-lined plate. Add the diced onion to the pot and cook over medium heat until translucent, stirring occasionally.
  • Once cooked, add the sausage back to the pot along with the crushed tomatoes, chicken broth, cream cheese, salt, Italian seasonings, and salt.
  • Bring to a boil, then reduce to a simmer and stir to help melt the cream cheese.  Add the tortellini and the spinach, then simmer for 4-5 minutes, or until the tortellini floats to the top and is tender.
  • Remove from the heat and allow to cool slightly before serving. Enjoy!

Notes

  • Storing Leftovers: store leftover tortellini soup in an airtight container in the fridge for up to 3 days.
  • Freezing: make sure soup is completely cooled before transferring to an airtight container and storing frozen for up to 1 month. To thaw, transfer to the fridge overnight.
  • To reheat: you can reheat in a small pot on the stove or in the microwave until warmed through.
  • Tip: This soup reheats best if frozen without the tortellini, so they don’t become mushy or fall apart.
