These sweet and salty churro oyster crackers make for an addicting snack mix that takes just a few minutes to prepare. Each crunchy oyster cracker is coated in a buttery toffee mixture that is baked onto them before coating in cinnamon sugar.
In a medium saucepan, combine the butter, sugar, corn syrup, vanilla extract, and cinnamon. Bring to a rapid boil and cook for 30 seconds, then remove from the heat and add the oyster crackers to the sugar mixture.
Mix to coat, then pour the crackers and sugar mixture onto a greased baking sheet.
Bake in your preheated oven for about 8 minutes, or until the sugar is bubbling on the crackers.
Remove from the oven, then combine the 3/4 cup sugar and 1 teaspoon cinnamon in a small bowl. Sprinkle over the baked crackers, tossing to coat. Separate any clumps of crackers and allow to cool on the baking sheet before serving or storing. Enjoy!
