Chipotle Cilantro Lime Rice Recipe

- 2 cups rice long grain, short grain, jasmine, or basmati
- 4 cups chicken broth
- 1 4-ounce can green chilis drained
- 4 tablespoons butter
- 1 tablespoon garlic minced
- 1/2 bunch cilantro minced
- 1 large lime juiced
In a rice cooker, add the rice, chicken broth, green chilis, butter, and garlic. Cover and set the rice cooker to "white rice." Don't open the lid until it has finished cooking.
Once the rice has finished cooking, let it sit for a couple minutes to cool. Add the cilantro and fresh lime juice, then fluff and stir with a fork.
Serve in a burrito bowl, salad, taco, or as a side dish. Enjoy!
Storing instructions: leftover rice can be stored in an airtight container in the fridge for up to 3 days.
Reheating: combine the rice and 2-3 tablespoons of water in a microwave safe container and mix well. Lay a wet paper towel over the rice and heat on high for about 30 seconds at a time until warmed through. Or, reheat in a small pot, with a little extra water, over low heat.
