Chipotle Cilantro Lime Rice Recipe

This copycat Chipotle cilantro lime rice recipe is a perfect side dish for your next taco Tuesday that takes just a few minutes to throw together in your rice cooker or instant pot.

Ingredients

  • 2 cups rice long grain, short grain, jasmine, or basmati
  • 4 cups chicken broth
  • 1 4-ounce can green chilis drained
  • 4 tablespoons butter
  • 1 tablespoon garlic minced
  • 1/2 bunch cilantro minced
  • 1 large lime juiced

Instructions

  • In a rice cooker, add the rice, chicken broth, green chilis, butter, and garlic. Cover and set the rice cooker to "white rice." Don't open the lid until it has finished cooking.
  • Once the rice has finished cooking, let it sit for a couple minutes to cool. Add the cilantro and fresh lime juice, then fluff and stir with a fork. 
  • Serve in a burrito bowl, salad, taco, or as a side dish. Enjoy!

Notes

Storing instructions: leftover rice can be stored in an airtight container in the fridge for up to 3 days.  
Reheating: combine the rice and 2-3 tablespoons of water in a microwave safe container and mix well.  Lay a wet paper towel over the rice and heat on high for about 30 seconds at a time until warmed through. Or, reheat in a small pot, with a little extra water, over low heat.
