Cheesy Ranch Potatoes Recipe

These Cheesy Bacon Ranch Potatoes are total comfort food that the whole family will love. They’re made with red potatoes that have been tossed in ranch dressing mix, oven-roasted and smothered in gooey cheddar cheese and bacon bits.

Ingredients

  • 3 pounds red potatoes quartered
  • 3 tablespoons avocado oil
  • tablespoons Hidden Valley Ranch Seasoning Mix
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup bacon bits
  • 4 green onions sliced thin (for garnish)

Instructions

  • Preheat oven to 425 degrees.
  • Place quartered potatoes in a large bowl or freezer bag and drizzle them with the avocado oil. Toss until evenly coated, then add the ranch seasoning mix, salt, and pepper. Toss again until the potatoes are evenly coated, then transfer to a parchment paper-lined baking sheet and spread into an even layer.
  • Bake in your preheated oven for about 20 minutes, or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 15-20 minutes so the other side can brown.
  • Once the potatoes are soft on the inside and brown and crisp on the outside, remove from the oven and top with shredded cheddar cheese and bacon bits. Return to the oven to cook for an additional 10 minutes, or until the cheese is melted.
  • Remove the potatoes from the oven and transfer to a serving bowl. Garnish with sliced green onions, then serve immediately. Enjoy!

Notes

  • Storing leftovers: leftover ranch bacon potatoes can be stored in an airtight container in the fridge for up to 4 days.
  • Freezer:  to freeze, transfer completely cooled potatoes to an airtight container and store frozen for up to 2 months.  Thaw in the fridge overnight before reheating the next day.
  • How to Reheat: either reheat in the microwave, or transfer potatoes to an oven-safe baking dish and cover with foil.  Warm in a preheated 350-degree oven for about 10-15 minutes, or until warmed through.
