These peanut butter balls are a sweet treat, loaded with peanut butter, a little crunch, and covered in smooth milk chocolate. They're easy to make and always a favorite.
In the bowl of a stand mixer, cream together the butter and peanut butter, beating until light and fluffy—about 3 minutes.
Add the graham cracker crumbs, powdered sugar, and vanilla and mix on low speed until combined and the mixture is crumbly but hold it's shape when squeezed.
Use butter or nonstick cooking spray to coat your hands, then roll the peanut butter mixture into 1" bite-sized balls.
Place the peanut butter balls onto a baking sheet lined with parchment paper and set in the fridge until you are ready to dip them.
Meanwhile, place the chocolate into a microwave-safe bowl and microwave for 1 minute. Take the chocolate out of the microwave and stir. Microwave again for 30 seconds and stir between heating cycles until completely melted.
Remove the peanut butter balls from the fridge and use a fork to dip the peanut butter balls into the chocolate. Shake the ball a little to remove any excess chocolate, then scrape the fork on the edge of the bowl to remove more excess chocolate.
Place the chocolate dipped peanut butter ball onto the parchment paper and set in the fridge or cool place until the chocolate is set. Enjoy!

Storing instructions: store in an airtight container in a cool, dark place at room temperature for up to 3 days, in the fridge for up to 2 weeks, or in the freezer for up to 2 months. To thaw, transfer to the fridge overnight.
