Baked Parmesan Zucchini Recipe

- 4 small zucchini sliced 1/4" (about 8 cups)
- 2 tablespoons avocado oil
- 1½ teaspoons Italian seasoning
- 1/4 teaspoon garlic powder
- 1/3 cup Parmesan cheese shredded
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
Preheat oven to 350 degrees F.
Wash and slice zucchini into 1/4" thick rounds, then put the zucchini into a large bowl. Add the avocado oil, Italian seasoning, garlic powder, and Parmesan cheese. Toss until well-coated, then spread onto a baking sheet in an even layer and season with salt and pepper.
Bake in a preheated oven for 15 minutes, or until barely soft. Remove from the oven and turn to broil. Broil for about 3-5 more minutes, or until golden brown and then remove from the oven.
Let cool for a few minutes, then serve warm. Enjoy!
