Baked Parmesan Zucchini Recipe

This simple Roasted Zucchini with Parmesan side dish is sure to be your new favorite way to eat zucchini. It just takes a few simple ingredients and less than 30 minutes to prepare these crispy, cheesy bites of this classic summer vegetable.

Ingredients

  • 4 small zucchini sliced 1/4" (about 8 cups)
  • 2 tablespoons avocado oil
  • teaspoons Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/3 cup Parmesan cheese shredded
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Preheat oven to 350 degrees F.
  • Wash and slice zucchini into 1/4" thick rounds, then put the zucchini into a large bowl. Add the avocado oil, Italian seasoning, garlic powder, and Parmesan cheese. Toss until well-coated, then spread onto a baking sheet in an even layer and season with salt and pepper.
  • Bake in a preheated oven for 15 minutes, or until barely soft. Remove from the oven and turn to broil. Broil for about 3-5 more minutes, or until golden brown and then remove from the oven.
  • Let cool for a few minutes, then serve warm. Enjoy!

Notes

  • Storing Instructions: while zucchini chips are best eaten soon after they are baked, leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • Leftovers ideas:  Try chopping up leftover zucchini and using it in frittatas, on sandwiches, or in pasta.
