Lemon Ginger Ice Cubes
- 8 large Lemons
- 12 inches Ginger Root
- 1-2 cups Water
For Each Serving of Honey Lemon Ginger Tea
- 8-12 ounces Boiling Water
- 1-2 Lemon Ginger Ice Cubes
- 1 teaspoon Honey
Rinse the lemons then peel off and discard the rind. Roughly cut the fresh lemon into quarters, and add to a blender. Rinse, peel, and cut the ginger root into 1" pieces and add to the blender.
Add about 1 cup of water, or enough to blend the lemons and ginger until smooth. Add a little extra water as needed until the mixture has a smoothie consistency.
Place a fine mesh strainer over a large bowl and squeeze to strain off as much juice as possible. Discard the pulp and continue straining until you have captured all of the juice.
Pour the lemon ginger juice into ice cube tray molds and freeze. Once frozen, transfer the frozen cubes to freezer bags.
