Totchos Recipe

This Mexican tater tot casserole is the best quick and easy meal to make when you’re craving comfort food but want to try something a little different. It's made with crispy tater tots layered with shredded pork, cheese, BBQ sauce, and ranch dressing and baked until cheesy and delicious.

Ingredients

  • 28 ounces tater tots
  • 1 pound shredded pork
  • 2 cups shredded cheddar cheese
  • 1/4 cup bbq sauce
  • 1/4 cup ranch dressing

Toppings

  • 1/2 cup guacamole
  • 1/2 cup ranch dressing
  • 2 tablespoons cilantro coarsely chopped
  • 1 cup tomatoes diced
  • 3 large green onions sliced

Instructions

  • Preheat oven to 420 degrees F.
  • Spread the tater tots on a single layer on a large baking sheet and cook according to package directions.
  • Once cooked, remove from the oven and add half of the cheese and half of the shredded pork. Repeat with the rest of the cheese and the rest of the shredded pork, then drizzle the BBQ sauce and ranch dressing over the top.
  • Return to the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and top with guacamole, drizzled ranch dressing, diced tomatoes, cilantro and green onions. Enjoy!

Notes

Storing leftovers: cover with foil or plastic wrap and store in the fridge for up to 2 days.
Reheating: heat in a preheated 350 degree oven until warmed through.
