Ingredients

  • 2 tablespoons avocado oil
  • 2 pounds chicken breast cut into 1" pieces
  • 1 cup red onion cut into 1/2" pieces
  • 1 cup red pepper cut into 1/2" pieces
  • 2 tablespoons garlic minced
  • 1/2 cup soy sauce
  • 1/4 cup light brown sugar
  • 1 cup basil leaves chopped

Instructions

  • Heat the oil in a heavy skillet or wok over high heat. Add the chicken and stir for 2-3 minutes, or until it is golden on the outside and the juices run clear on the inside.
  • Stir in the onions, peppers, and garlic. Cook until fragrant—about 1 more minute. Then, pour in the soy sauce and brown sugar and continue to cook until the sauce begins to glaze onto the meat—about 1-2 more minutes.
  • Stir in the basil leaves and cook until the chicken is completely cooked through, the basil is wilted, and the liquid has mostly evaporated.
  • Serve warm with rice. Enjoy!
