- 1 pound bacon sliced into 1/2" pieces
- 32 ounces tater tots frozen
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 cups shredded cheddar cheese
- 12 large eggs
- 1/2 cup milk
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 tablespoons chives chopped
Preheat oven to 350 degrees F.
Heat a large skillet over medium heat and add sliced bacon. Cook over medium heat, stirring occasionally, for 5-7 minutes or until the bacon is golden brown. Once cooked, remove the bacon bits and drain on paper towels. Set aside.
Grease a 9" x 13" baking dish, then line the bottom of the prepared baking dish with tater tots. Season with salt and pepper along with half of the bacon bits and half of the cheddar cheese.
In a medium mixing bowl, whisk together the eggs, milk, onion powder, garlic powder, and chives. Pour this egg mixture over the tater tots and top with the remaining cheddar cheese and bacon bits. If you don't plan on baking right away, wrap with plastic wrap and store in the fridge overnight.
Once you are ready to bake, place the prepared tater tot dish into a preheated oven for about 1 hour, or until the edges and top are golden brown.
Remove from the oven and let cool for at least 5 minutes before serving. Enjoy!
Storing and Reheating Instructions
- Refrigerator: cover and store leftovers in the fridge for up to 3 days.
- Freezer: wrap in plastic wrap and then aluminum foil and store in the freezer for up to 3 months. To thaw, transfer to the fridge overnight.
- To reheat: Reheat in a preheated 350 degree oven for about 20 minutes, or until warmed through.
