Strawberry Cream Cheese French Toast Recipe
This baked French toast casserole is sweet and custardy with a crisp streusel topping that’s studded with fresh strawberries and ooey gooey cream cheese. Prep the day before and bake the morning-of for a sweet, simple and decadent make-ahead breakfast casserole.

- 1 loaf French bread cut into 1" pieces
- 2 cups milk
- 12 large eggs
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1½ cups strawberries diced into 1/2" pieces
- 16 ounces cream cheese cut into 1/2" pieces
Streusel Topping
- 6 tablespoon butter room temperature, cut into cubes
- 1/3 cup light brown sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon cinnamon
The Day Before
Spray a 9" x 13" baking dish with nonstick cooking spray, then place your cut or torn pieces of French bread evenly in the bottom of your baking dish. The bread should be about even with the top of the baking dish.
In a large mixing bowl, add the eggs and whisk to break them up. Then, add the milk, maple syrup, and vanilla and whisk again until all the ingredients are well-combined. Pour your egg mixture over the bread, covering as much of it as possible. Use a fork to gently stir your bread and egg mixture together.
Sprinkle the strawberries evenly on top and gently mix in, then either cut or scoop 1/2" pieces of cream cheese and place evenly over the top.
Cover with plastic wrap and place in the refrigerator overnight, or for at least 4 hours, to allow time for the bread to soak up all of the liquid.
Baking the French Toast
Preheat the oven to 350 degrees F. and pull the baking dish from the fridge.
In a medium-size mixing bowl, add the butter, brown sugar, flour, and cinnamon. Stir or mix with a fork until the streusel has 1/4" pieces.
Sprinkle the streusel evenly over the bread and egg mixture and put into your preheated oven. Bake for 45-50 minutes, or until the top and edges are light golden brown.
Remove from the oven and let cool slightly, then cut into 12 portions. Serve with whipped cream, chopped pecans, berries or your favorite syrup. Enjoy!
Storing leftovers: store leftover French toast bake covered in the fridge for up to 3 days.
Reheating: to reheat, cover with foil and place into a preheated 350 degree oven until warmed through.
