Spicy Tater Tot Casserole Recipe

This recipe for tater tot casserole has a spicy green chili and cream cheese filling with crispy fried onions and melted cheddar cheese on top. It’s an easy side dish to serve with just about any kind of roasted or grilled protein.

Ingredients

  • 3 tablespoons butter
  • cups yellow onion diced into 1/2" pieces
  • 3 pounds tater tots
  • 2 teaspoons garlic minced
  • 2 cups chicken broth
  • 8 ounces cream cheese room temperature
  • 1 cup sour cream
  • 2 4-ounce cans diced green chiles
  • 3 cups shredded cheddar cheese (divided)
  • 1 cup French's fried onions

Instructions

  • Preheat the oven to 350 degrees F.
  • Spray the inside of a 9" x 13" baking dish with non-stick cooking spray and set aside.
  • In a skillet over medium heat, add the butter and diced onion. Cook, stirring frequently, until the onion lightly caramelizes—about 5 minutes. Add the minced garlic and cook while stirring until the garlic is translucent—about 2-3 more minutes.
  • Add the chicken broth, cream cheese, sour cream, and green chiles into the pan with the onions. Use a whisk to mix until the cream cheese is fully incorporated and melted.
  • Spread the tater tots in the prepared baking dish and sprinkle on 2 cups of shredded cheese. Mix together loosely. Pour the cream cheese mixture over the tater tots and sprinkle the remaining 1 cup of cheese and the fried onions evenly over the top.
  • Bake uncovered in the preheated oven for 40-50 minutes, or until the edges are bubbly and lightly golden brown. 
  • Remove from the oven and let cool slightly before serving. Enjoy!

Notes

Storing instructions: cover any leftovers with plastic wrap or aluminum foil and store in the fridge for up to 3 days, or in the freezer for up to 2 months.
Make-ahead tips: to freeze this unbaked, cover with plastic wrap and a layer of aluminum foil, then store frozen for up to 2 months. To thaw, transfer to the fridge overnight. The next day, pull it out to room temperature while you preheat your oven. If you are baking it completely, follow the directions in the recipe. Otherwise, you can heat until warmed through.
Reheating: pull leftovers out to room temperature while you preheat your oven to 350 degrees F. Reheat for about 20-30 minutes, or until warmed through.
