These no-bake peanut butter bars are a delicious, easy dessert to make during any time of the year. They are rich, extra thick and perfect for any chocolate and peanut butter lover.
Prepare a 9" x 13" baking dish by lining with parchment paper so that the paper comes over the edges of the pan to make it easy to lift out and cut when finished.
In the bowl of a stand mixer, add the peanut butter and room temperature butter. Using the paddle attachment, cream together until light and fluffy—about 3 minutes.
Add the powdered sugar slowly, making sure it is well-combined, then add the vanilla extract and graham cracker crumbs and mix well.
Transfer the peanut butter mixture to your prepared baking dish and spread evenly over the bottom, then put in the refrigerator to chill while you prepare the chocolate.
Place chocolate into a microwave-safe bowl and heat in the microwave for about 20-30 seconds at a time, stirring in between, until it is melted but not too hot. Remove the baking dish with the peanut butter mixture from the fridge, then spread the melted chocolate evenly over the peanut butter. Return to the fridge to chill for at least 1 hour.
Cut into 1" chunks and serve immediately, or store in the fridge for up to one month. Enjoy!
