Ingredients

  • 1 teaspoon garlic minced
  • 1 teaspoon salt
  • 1/2 cup red onion diced
  • 3 tablespoons cilantro chopped
  • 1/8 teaspoon cayenne powder
  • 2 medium Roma tomatoes diced
  • 3 large avocados
  • 1 large lime juiced

Instructions

  • Place the minced garlic and 1 teaspoon of salt directly onto a cutting board. Using a large knife, run the blade of the knife over the garlic to mash the garlic and the salt together, creating a paste-like mixture.
  • Transfer the garlic and salt mixture to a medium mixing bowl and add the diced red onion, chopped cilantro, cayenne, and tomatoes.
  • Cut the avocados and half and remove the seeds, then scoop out the flesh and add to the rest of the ingredients in the bowl. Squeeze lime juice on the avocados, then using a fork or a potato masher, mash the avocados to desired consistency.
  • Mix all of the ingredients together, taste and season with extra salt, lime juice, and cilantro if needed. Serve immediately and enjoy!

Notes

Storing instructions: store in an airtight container with plastic wrap pressed directly on top of the guacamole.  This keeps the air from getting to the avocados which oxidize quickly, turning them brown.  Keep covered in the fridge for up to 5 days.
