Easy Berry Cobbler Recipe

This mixed berry cobbler is a delicious dessert that is quick and easy enough to whip up all summer long. The juicy mixed berry filling is topped with a soft and buttery cobbler topping made from yellow cake mix.

Ingredients

Berry Mixture

  • 6 cups frozen raspberries, blueberries, and blackberries (or about 8 cups fresh berries)
  • 2 tablespoons cornstarch
  • 2/3 cup sugar
  • 1 tablespoon lemon juice
  • 1 lemon zested

Cake Mix Cobbler Topping

  • 1 box yellow cake mix
  • 1/2 cup butter cut into 9 pieces

Instructions

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, add the frozen berries and sprinkle the cornstarch and sugar over the top. Add the lemon juice and zest and toss to evenly coat.
  • Transfer the mixed berry mixture to a 9" x 9" baking dish, or a 10" cast iron skillet.
  • Sprinkle the cake mix evenly over the top of the berries. Add the sliced butter evenly over the top of the cake mix.
  • Bake in a preheated oven for 35-45 minutes, or until the top is golden brown and the berries are bubbly.
  • Remove from the oven and serve warm with vanilla ice cream or fresh whipped cream. Enjoy!

Notes

Storing leftovers: cover any leftover cobbler with aluminum foil and refrigerate for up to 4 days.
Reheating: either microwave a small portion or reheat in a 350 degree oven for about 15 minutes, or until warmed through.
