Easy Berry Cobbler Recipe
This mixed berry cobbler is a delicious dessert that is quick and easy enough to whip up all summer long. The juicy mixed berry filling is topped with a soft and buttery cobbler topping made from yellow cake mix.

Berry Mixture
- 6 cups frozen raspberries, blueberries, and blackberries (or about 8 cups fresh berries)
- 2 tablespoons cornstarch
- 2/3 cup sugar
- 1 tablespoon lemon juice
- 1 lemon zested
Cake Mix Cobbler Topping
- 1 box yellow cake mix
- 1/2 cup butter cut into 9 pieces
Preheat oven to 350 degrees F.
In a large mixing bowl, add the frozen berries and sprinkle the cornstarch and sugar over the top. Add the lemon juice and zest and toss to evenly coat.
Transfer the mixed berry mixture to a 9" x 9" baking dish, or a 10" cast iron skillet.
Sprinkle the cake mix evenly over the top of the berries. Add the sliced butter evenly over the top of the cake mix.
Bake in a preheated oven for 35-45 minutes, or until the top is golden brown and the berries are bubbly.
Remove from the oven and serve warm with vanilla ice cream or fresh whipped cream. Enjoy!
Storing leftovers: cover any leftover cobbler with aluminum foil and refrigerate for up to 4 days.
Reheating: either microwave a small portion or reheat in a 350 degree oven for about 15 minutes, or until warmed through.
