Easy Applesauce Muffins Recipe

These recipe for applesauce muffins is super moist, full of flavor and so easy to make.  Finish with a dusting of cinnamon sugar for a real breakfast treat.

Ingredients

Applesauce Muffins

  • 1 cup applesauce
  • 1 cup light brown sugar
  • 1/2 cup butter melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 teaspoons cinnamon (divided)
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1/4 cup sugar

Instructions

  • Preheat oven to 350 degrees F. 
  • Grease or line 24 muffin tins with paper liners and set aside.
  • In a large mixing bowl, combine the applesauce, brown sugar, melted butter, eggs and vanilla extract and whisk to combine. In a separate bowl, add the cinnamon, baking soda and flour and whisk.
  • Add the dry ingredients to the wet ingredients and fold together using a rubber spatula until well mixed.
  • Using an ice cream scoop or a spoon, scoop the batter into the prepared muffin tins, filling them about 3/4 of the way full.
  • Bake for 22-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.  In the meantime, mix together 1/4 cup of sugar and 1 teaspoon of ground cinnamon in a small bowl and set aside.
  • Once baked, remove the muffins from the oven and sprinkle with the cinnamon sugar. Let cool for at least 5 minutes before serving. Enjoy!

Notes

Storing instructions: Store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week. Freezing: bake, cool, and store your Applesauce Muffins in freezer bags in the freezer.  They will be good for up to 2 months stored this way.  To thaw, transfer to the fridge overnight, then set out at room temperature for at least 30 minutes or microwave briefly to take the chill off.
