Chocolate No Bake Cheesecake Recipe

This recipe for no bake chocolate cheesecake recipe is an easy no-frills dessert.  It's got a graham cracker crust filled with creamy chocolate mousse cheesecake and is the perfect way to celebrate any holiday or regular 'ol Tuesday.

Ingredients

Graham Cracker Crust

  • 6 tablespoons butter melted
  • cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/8 teaspoon cinnamon

Cheesecake

  • cups heavy whipping cream
  • 16 ounces cream cheese room temperature
  • 1 cup powdered sugar
  • 6 tablespoons unsweetened cocoa powder

Instructions

Graham Cracker Crust

  • In a large mixing bowl, combine the melted butter, graham cracker crumbs, sugar, and cinnamon and mix well. Press mixture firmly into a 9" pie plate or springform pan.
  • Transfer to the freezer for at least 1 hour, or overnight.

Chocolate Cheesecake

  • Using a stand mixer, whip the heavy cream until soft peaks form. Transfer to another large bowl and set aside.
  • In the same bowl you used to whip the cream, beat the cream cheese using the paddle attachment until fluffy—about 3 minutes. Add the powdered sugar and cocoa powder to the cream cheese and beat again until fluffy.
  • Slowly fold in the whipped cream until well-combined, then pour the mixture into your prepared crust.
  • Refrigerate for 2 hours or until ready to serve. Enjoy!

Notes

Storing instructions: store lightly covered in the fridge for up to 3 days, or in the freezer for up to 2 months.
To bake the crust instead, bake in a preheated 350 degree oven for about 8 minutes, or until the edges are very lightly golden. Remove from the oven and let cool completely before filling.
