Graham Cracker Crust
- 6 tablespoons butter melted
- 1½ cups graham cracker crumbs
- 1/4 cup sugar
- 1/8 teaspoon cinnamon
Cheesecake
- 1¼ cups heavy whipping cream
- 16 ounces cream cheese room temperature
- 1 cup powdered sugar
- 6 tablespoons unsweetened cocoa powder
Graham Cracker Crust
In a large mixing bowl, combine the melted butter, graham cracker crumbs, sugar, and cinnamon and mix well. Press mixture firmly into a 9" pie plate or springform pan.
Transfer to the freezer for at least 1 hour, or overnight.
Chocolate Cheesecake
Using a stand mixer, whip the heavy cream until soft peaks form. Transfer to another large bowl and set aside.
In the same bowl you used to whip the cream, beat the cream cheese using the paddle attachment until fluffy—about 3 minutes. Add the powdered sugar and cocoa powder to the cream cheese and beat again until fluffy.
Slowly fold in the whipped cream until well-combined, then pour the mixture into your prepared crust.
Refrigerate for 2 hours or until ready to serve. Enjoy!
Storing instructions: store lightly covered in the fridge for up to 3 days, or in the freezer for up to 2 months.
To bake the crust instead, bake in a preheated 350 degree oven for about 8 minutes, or until the edges are very lightly golden. Remove from the oven and let cool completely before filling.
