Chewy Chocolate Cookies Recipe

These chewy chocolate cookies are thick, chocolatey, and can be finished in less than 30 minutes. Enjoy as a plain chocolate cookie, or use as a base to add your favorite mix-ins, dip in chocolate, or decorate.

Ingredients

  • 1 cup butter room temperature
  • cup brown sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • cup all-purpose flour

Instructions

  • Preheat oven to 350 degrees F.
  • Add the room temperature butter and brown sugar to the bowl of a stand mixer and cream with the paddle attachment until light and fluffy—about 3 minutes. Slowly add the room temperature eggs and vanilla, scraping down the sides as needed.
  • In a separate large bowl, whisk together the cocoa powder, baking soda, salt, and flour. Add the dry ingredients to the butter mixture and mix on low speed until the cookie dough comes together and is well combined.
  • Using an ice cream scoop or spoons, scoop into 1½ tablespoon balls and place about 2" apart on a cookie sheet lined with parchment paper.
  • Bake in a preheated 350 degree oven for 8-11 minutes, or until the center of the cookie is just set and the edges of the cookies are slightly firm.
  • Remove from the oven and let the cookies cool for a few minutes before transferring to a cooling rack to cool completely. Enjoy!

Notes

Store baked cookies in an airtight container at room temperature for up to 4 days.
Store cookie dough in the fridge for up to 5 days, or scooped and frozen for up to 2 months. To bake from frozen, pull frozen dough balls from the freezer and transfer to a baking sheet while you preheat the oven. Bake as directed.
