- 5 pounds pork tenderloin
- 1 cup salsa
- 1 cup light brown sugar
- 1 4-ounce can green chilis
- 3 tablespoons garlic minced
- 1 tablespoon onion powder
- 1 teaspoon salt
- 2 teaspoons cumin
In a blender, add the salsa, brown sugar, green chilis, garlic, onion powder, salt, and cumin. Blend until smooth.
Place the pork in the bottom of a slow cooker, then pour the salsa mixture over the top. Cover and cook on high for 5 hours, or low for 10 hours. You will know when the pork is done when it shreds easily with two forks.
When the pork is done cooking, lift it out of the slow cooker. Scrape off any large chunks of fat and discard. Shred the meat with the forks and add back into the slow cooker and let the shredded pork absorb the juices.
Use immediately in taco bowls, tacos, burritos, quesadillas, or enchiladas. Enjoy!
Storing instructions: cool completely, then store in an airtight container in the fridge for up to 1 week, or in the freezer for up to 2 months.
Reheating: to reheat in the microwave, just place into a microwave-safe container with a little of the cooking liquid and reheat for about 30 seconds at a time on high until warm. Or, reheat in a pot on medium heat over the stove.
