Buffalo Pork Bite Recipe

Buffalo Sauce
- 1/2 cup light brown sugar
- 1/2 cup Frank's Red Hot Sauce
Pork Bites
- 1½ pounds pork chops cut into 3/4" pieces
- 1 tablespoon avocado oil
- 1/2 teaspoon salt
- ¼ teaspoon black pepper
Toppings
- 1/2 cup blue cheese crumbles
- 2 tablespoons parsley chopped
- 1/2 cup ranch dressing or blue cheese dressing
In a medium-size saucepan, add the brown sugar and hot sauce. Stir to combine, then bring to a boil. Boil the sauce for 1 minute, then set aside.
Heat a cast iron skillet over medium high heat and add the avocado oil. Once shimmering, add the pork chop pieces and season with salt and pepper. Cook for about 2 minutes, or until golden on the bottom, then use tongs to turn the pork over. Cook until golden on all sides, or about 10 minutes.
Once the pork has cooked, remove from the heat and add the buffalo sauce. Toss to coat.
Transfer to a serving platter and top with blue cheese crumbles and fresh parsley, if desired. Serve warm with ranch or blue cheese dressing. Enjoy!
Storing leftovers: store leftover pork bites in an airtight container in the fridge for up to 3 days.
Reheating: reheat in the microwave or add to a small saucepan with a little extra buffalo sauce. Heat over medium heat, stirring often, until warmed through.
