Blackberry Crumble Bars Recipe

These blackberry crumble bars are buttery and tender with a thick layer of juicy blackberry filling running through the middle.  They’re easy to make and perfect for a sweet breakfast or afternoon treat.

Ingredients

Crumble Crust

  • 3 cups all-purpose flour
  • 1 cup butter
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1 large egg
  • 1 teaspoon vanilla extract

Blackberry Filling

  • 3 cups blackberries
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice

Instructions

  • Preheat oven to 350 degrees F, then grease a 9" x 13" baking dish set aside.
  • In a food processor, pulse the flour and butter until the mixture resembles coarse meal. Add the sugar, baking powder, cinnamon, salt, and lemon zest, then pulse again to combine. Finally, add the egg and vanilla extract and pulse just until evenly combined but still crumbley.
  • Add 2/3 of the crumble mixture to the prepared baking pan and press it down evenly using the flat side of a measuring cup or your hands. Set the remaining 1/3 of the crumble aside.
  • In a medium saucepan, combine the blackberries, sugar, cornstarch, and lemon juice. Bring to a boil over medium high heat and boil for 2 minutes, stirring constantly.
  • Once it has thickened, pour the blackberries over the prepared crust and top with remaining crumble topping.
  • Bake in a preheated 350 degree oven for 25-35 minutes, or until the crumble topping is golden brown.
  • Remove from the oven and let cool completely before cutting squares or bars. Enjoy!

Notes

Storing instructions: store at room temperature in an airtight container for up to 4 days, in the fridge for up to 1 week, or in the freezer for up to 2 months.  To thaw, pull from the freezer and let sit at room temperature for a few hours, or overnight.
