Baked Zucchini Fries Recipe

These easy Parmesan zucchini fries have a perfectly crispy crust made from seasoned breadcrumbs and Parmesan cheese.  Serve with warm marinara dipping sauce for a simple side dish that’s fun, delicious and totally addicting.

Ingredients

  • 4 small zucchini quartered lengthwise
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 teaspoons water
  • 1 cup bread crumbs
  • 1/2 cup Parmesan cheese grated
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons fresh parsley chopped for garnish
  • 1 cup marinara sauce for dipping

Instructions

  • Preheat oven to 400 degrees F.
  • Line a large baking sheet with parchment paper, or spray with nonstick cooking spray, and set aside.
  • In a shallow bowl or pie plate, add the flour. In a second shallow bowl, combine the eggs and water and whisk well. In a third shallow bowl, whisk together the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  • Working in batches, dredge each zucchini spear into the flour and then into the egg mixture, making sure it is fully coated. Let the excess drip off, then place into the breadcrumb mixture and roll around to make sure all sides are well coated.
  • Place coated zucchini onto the prepared baking sheet leaving space between each piece. Repeat the process until all of the zucchini is coated.
  • Bake in a preheated oven for 18 to 22 minutes, or until golden brown.
  • Remove from the oven and let cool slightly, then top with fresh parsley and serve warm with warm marinara sauce for dipping. Enjoy!

Notes

Storing instructions: while these taste best when served soon after cooking, you can store leftovers in an airtight container in the fridge for up to 2 days. 
Reheating: reheat in a preheated 350 degree oven for about 10 minutes, or until the outside is crisp.
