- 2 pounds chicken breasts cut into 1" chunks
- 1 pound bacon each slice cut into 3 smaller pieces
- 1/2 cup light brown sugar
- 1/4 teaspoon chili powder
Preheat oven to 400 degrees F.
Cut each slice of bacon into thirds, then wrap a piece of bacon around each piece of chicken and secure with a toothpick through the center.
In a small bowl, combine the chili powder with the brown sugar and then toss each bacon wrapped chicken piece in the brown sugar mixture.
Place on a large baking sheet lined with parchment paper and repeat with all of the pieces of chicken. Bake in a preheated degree oven for 15 minutes, or until the bacon is crispy and the sugar mixture has caramelized.
Remove from the oven and let cool for a couple of minutes before serving. Enjoy!
Storing leftovers: once baked, these can be stored in an airtight container in the fridge for up to 3 days.
Reheating: preheat your oven 350 degrees and bake for about 10-15 minutes, or until warmed through.
Make-ahead tips: to freeze unbaked chicken bites, wrap in bacon and store in an airtight container in the freezer for up to 1 month. Once you are ready to bake, remove them from the freezer and immediately toss in the brown sugar mixture. Bake as directed, adding about 5-7 minutes to the total cooking time.
