Bacon Jalapeño Popper Dip Recipe

- 16 ounces cream cheese room temperature
- 1 cup sour cream
- 1/2 cup mozzarella cheese shredded
- 1 cup cheddar cheese shredded
- 1 4-ounce can diced green chilis drained
- 1 4-ounce can diced jalapeños drained
- 1/4 cup green onions sliced thinly
- 1/2 cup bacon bits (divided)
Crumble Topping
- 1 cup Ritz crackers crushed
- 1/2 cup Parmesan cheese shredded
- 1/4 cup butter melted
Garnish
- 2 tablespoons parsley finely chopped
- 1/4 jalapeño pepper deseeded and sliced thin
Preheat oven to 375 degrees F.
In the bowl of a stand mixer, add the cream cheese and sour cream. Using the paddle attachment, cream together on medium speed until fluffy and well-combined. Add the mozzarella cheese, cheddar cheese, green chilis, jalapeños, green onions, and bacon bits and mix again to combine.
Spray an 8" x 8" baking dish with nonstick cooking spray, then spread the cream cheese mixture into the baking dish.
In a separate bowl, combine the cracker crumbs, Parmesan cheese, and butter and mix well. Sprinkle the crumb topping over the cream cheese mixture.
Bake in a preheated oven for 20-25 minutes, or until bubbly on the edges and golden brown on top.
Remove from the oven and garnish with chopped parsley, thinly sliced jalapeño peppers and reserved bacon bits. Enjoy!
Storing leftovers: store dip in the refrigerator, covered with plastic, for up to 4 days. It can also be stored in the freezer for up to 2 months, then thawed in the fridge overnight.
Reheating: reheat in a preheated 350 degree oven for about 15 minutes, or until warmed through.
